🍪 Peanut Butter Lunch Lady Cookie Bars
For the cookie bars:

½ cup unsalted butter, melted

½ cup creamy peanut butter

1 cup granulated sugar

½ cup brown sugar

2 large eggs

1 tsp vanilla extract

1 ½ cups all-purpose flour

½ tsp baking powder

¼ tsp salt

For the frosting:

½ cup creamy peanut butter

¼ cup butter

¼ cup milk

2 cups powdered sugar

1 tsp vanilla extract

Instructions:

Preheat oven to 350°F (175°C). Line a 9x13" pan with parchment paper.

In a large bowl, mix melted butter, peanut butter, and both sugars. Add eggs and vanilla.

Stir in flour, baking powder, and salt until smooth.

Spread into the pan and bake for 22–25 minutes.

While still warm, make the frosting: melt peanut butter and butter in a saucepan, stir in milk and vanilla, then whisk in powdered sugar until smooth.

Spread frosting over warm bars. Let cool before cutting into squares.

🫐 Blueberry Biscuits with Vanilla Glaze
For the biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

¼ cup granulated sugar

½ cup cold unsalted butter, cubed

¾ cup buttermilk

1 cup fresh or frozen blueberries (do not thaw if frozen)

For the glaze:

1 cup powdered sugar

1–2 tablespoons milk

½ teaspoon vanilla extract

Instructions:

Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.

In a bowl, whisk flour, baking powder, baking soda, salt, and sugar.

Cut in cold butter using your fingers or a pastry cutter until crumbly.

Add buttermilk and stir until just combined. Gently fold in blueberries.

Drop dough onto tray using a large spoon or ice cream scoop.

Bake for 15–18 minutes until golden brown.

Mix glaze ingredients until smooth. Drizzle over warm biscuits and serve.

🍓 Strawberry Cheesecake Bars
Crust:

2 cups graham cracker crumbs

2 tablespoons granulated sugar

½ cup unsalted butter, melted

Filling:

16 oz cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup strawberry puree (or finely mashed strawberries)

Topping:

½ cup crushed freeze-dried strawberries or cookie crumbles

Fresh strawberries for garnish

Instructions:

Preheat oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper.

Mix graham crumbs, sugar, and melted butter in a bowl. Press firmly into the pan to form a crust.

In another bowl, beat cream cheese until smooth. Add sugar, vanilla, and eggs. Mix until creamy.

Fold in strawberry puree. Pour over the crust and spread evenly.

Bake for 35–40 minutes or until set. Let it cool, then chill in the fridge for at least 3 hours.

Top with crushed strawberries and fresh ones before slicing into bars. Enjoy!

Blueberry Coffee Cake
🫐 Ingredients:

For the cake:

½ cup (115g) unsalted butter, softened

¾ cup (150g) granulated sugar

2 large eggs

1 tsp vanilla extract

2 cups (250g) all-purpose flour

2 tsp baking powder

½ tsp salt

½ cup (120ml) milk

2 cups (300g) fresh or frozen blueberries (tossed in 1 tbsp flour)

For the crumb topping:

½ cup (100g) brown sugar

½ cup (65g) all-purpose flour

1 tsp cinnamon

¼ cup (60g) unsalted butter, cold and cubed

Instructions (Straight to the Point):
Preheat oven to 175°C (350°F). Grease a 9-inch square pan.

In a large bowl, cream together butter and sugar until fluffy.

Beat in eggs one at a time, then add vanilla.

In another bowl, mix flour, baking powder, and salt.

Add dry ingredients to the wet mix alternately with milk, mixing until just combined.

Gently fold in the flour-coated blueberries.

Pour batter into the pan and spread evenly.

Make the crumb topping:
8. Mix brown sugar, flour, and cinnamon. Cut in cold butter until crumbly.
9. Sprinkle over the cake batter.
10. Bake for 40–45 minutes, or until a toothpick comes out clean. Cool before slicing.

🍰 Brown Sugar Caramel Pound Cake
Ingredients:

For the Cake:

1 cup unsalted butter, softened

1/2 cup vegetable oil

2 cups light brown sugar

1 cup granulated sugar

5 eggs

3 cups all-purpose flour

1 tsp baking powder

1/2 tsp salt

1 cup whole milk

1 tsp vanilla extract

1 cup chopped pecans (optional)

For the Caramel Glaze:

1/2 cup unsalted butter

1 cup packed light brown sugar

1/4 cup milk or heavy cream

1 tsp vanilla extract

Instructions:

Preheat oven to 325°F (163°C). Grease and flour a bundt pan.

Cream butter, oil, and sugars in a large bowl until light and fluffy.

Add eggs one at a time, beating well after each.

In a separate bowl, whisk flour, baking powder, and salt.

Add flour mixture and milk alternately to the batter, beginning and ending with flour.

Stir in vanilla and pecans (if using).

Pour into pan and bake for 85–90 minutes or until a toothpick comes out clean.

Cool in pan 10 minutes, then invert onto a wire rack.

For the Glaze:

Melt butter in a saucepan over medium heat.

Stir in brown sugar and milk. Bring to a boil, then simmer 2–3 minutes.

Remove from heat, stir in vanilla, and pour warm glaze over the cake.

🍲 Recipe: Seafood Bisque Delight
Ingredients:

1 tbsp olive oil

2 tbsp unsalted butter

1/2 cup onion, finely chopped

2 cloves garlic, minced

2 tbsp flour

1/2 cup dry white cooking stock (or water with seasoning)

2 cups seafood or chicken stock

1 cup heavy cream

1/2 tsp paprika

Salt & pepper to taste

1 cup cooked shrimp

1 cup cooked crab meat

1 small cooked lobster tail, chopped

Fresh parsley for garnish

Instructions:

In a large pot, heat olive oil and butter over medium heat.

Add onion and cook until translucent, about 3 minutes.

Stir in garlic and flour, whisk for 1 minute.

Gradually add stock while stirring to avoid lumps.

Pour in heavy cream and paprika. Let it simmer until slightly thickened, about 10 minutes.

Add cooked shrimp, crab, and lobster. Heat for 3–5 minutes until warmed through.

Season with salt and pepper.

Serve hot, garnished with parsley and a drizzle of cream if desired.

Loaded Chicken Bacon Ranch Quesadilla Melts

🧂 Ingredients:

2 cups cooked chicken breast, shredded or chopped

1/3 cup ranch dressing

1/2 cup crispy turkey

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

4 large flour tortillas

1 tbsp butter or olive oil for the pan

👩‍🍳 Instructions:

In a bowl, mix chicken, and both cheeses.

Place a tortilla in a pan over medium heat.

Spoon the chicken mixture over half the tortilla, then fold it over.

Cook for 2–3 minutes per side until golden and cheese is melted.

Slice into wedges and serve warm!

🌮 Honey Lime Chicken & Avocado Nacho Wonton Tacos
Crispy golden wonton shells packed with tender honey-lime chicken, creamy avocado, juicy tomato salsa, and a drizzle of tangy lime crema—these bite-sized tacos are a total flavor bomb. Fresh, zesty, and perfect for parties or weeknight dinner!



📝 Ingredients:
12 wonton wrappers

Cooking spray or a little oil

For the chicken:

2 chicken breasts, diced

3 tbsp honey

Juice and zest of 2 limes

2 garlic cloves, minced

1 tsp chili powder

Salt and pepper to taste

For the toppings:

1 avocado, diced

1/2 cup canned black beans, rinsed

1/2 cup diced tomatoes

1/4 cup chopped fresh cilantro

1/4 cup sour cream or Greek yogurt

1 tbsp lime juice

Optional: sliced green onions or jalapeños

🔪 Instructions
Preheat oven to 375°F (190°C). Lightly spray a muffin tin and press one wonton wrapper into each cup to form taco shells. Bake for 8–10 minutes until golden and crisp.

In a pan, sauté the diced chicken in olive oil. Add garlic, honey, lime juice/zest, chili powder, salt, and pepper. Cook until fully done and caramelized.

Mix sour cream (or yogurt) with lime juice for the drizzle.

Assemble each taco: fill with chicken, then top with avocado, black beans, tomato, cilantro, and drizzle with lime crema.

Serve immediately while crisp and fresh!
