Roasted Harvest Vegetable Medley
Colorful roasted vegetables, tangy feta, crunchy walnuts, and sweet cranberries come together in one hearty dish. 🥦🍠 It's a wholesome recipe that's perfect as a holiday side or an easy weeknight dinner.
RECIPE
INGREDIENTS:
4 cups butternut squash, peeled and cubed (about 600 g)
3 cups broccoli florets (about 300 g)
1 yellow bell pepper, diced
1 small red onion, cut into wedges
3 tbsp olive oil
2 tbsp maple syrup or honey
2 cloves garlic, minced
1 tsp dried thyme
1 tsp dried rosemary
½ tsp smoked paprika
1 tsp salt
½ tsp black pepper
½ cup (60 g) dried cranberries
½ cup (50 g) chopped walnuts, lightly toasted
150 g (5 oz) feta cheese, cubed or crumbled
Fresh rosemary or parsley, for garnish
INSTRUCTIONS:
Preheat the oven to 425°F (220°C). Line a large baking tray with parchment paper.
In a large bowl, combine the squash, broccoli, bell pepper, and red onion.
Whisk together the olive oil, maple syrup, garlic, thyme, rosemary, smoked paprika, salt, and black pepper.
Pour the seasoning mixture over the vegetables and toss until evenly coated.
Spread the vegetables in a single layer on the baking tray.
Roast for 25 minutes, then gently stir and continue roasting for 10–15 minutes, until the vegetables are tender and caramelized.
Transfer to a serving platter and sprinkle with the dried cranberries, toasted walnuts, and feta cheese.
Garnish with fresh rosemary or parsley and serve warm.
