Spoon about one heaping ยผ cup of apple pie filling down the center of each tortilla.
Sprinkle the filling with a little cinnamon.
Roll up each tortilla, tucking in the edges, then place seam-side down in a prepared baking dish.
In a medium saucepan over medium heat, combine the butter, white sugar, brown sugar, and water.
Bring the mixture to a boil while stirring constantly.
Reduce the heat and let it simmer for 3 minutes.
Remove from heat and stir in the vanilla extract.
Pour the warm sauce evenly over the rolled tortillas.
Let the enchiladas stand for 45 minutes before baking. This helps the tortillas soak up the sauce and gives them a soft, pastry-like texture.
Preheat oven to 350ยฐF.
Bake for 30 minutes, or until golden brown and bubbling.
Serve warm and enjoy every sweet, cozy bite.

Serve warm straight from the oven for the best gooey texture.
Add a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
A drizzle of caramel sauce or a sprinkle of cinnamon makes them even more delicious.
For a pretty presentation, dust lightly with powdered sugar before serving.
Pair with coffee, tea, or a glass of warm milk for the perfect dessert moment.
