You know your honey is the real deal when it crystallizes over time. Easy fix = heat the jar in a pot of water slowly to bring back to liquid form without disrupting honey properties.
If your honey STAYS liquid then it is probably cut with corn syrup or a sucrose syrup.

Honey can have different flavor profiles depending on what the honey bees harvest through out the season? Lighter honey is usually tapped first and darker honey is last harvest. Light colors range from mild and floral while dark colors are herbal and deeper "spice" flavors.
