Ingredients :

1 kg 2.2 lb Chicken thigh fillets,
For the marinade:
5 tbsp Olive oil
2 tbsp Honey
1 tbsp Dijon mustard
3 Garlic cloves Crushed
1 Lemon Zest and juice
1 tbsp Mixed herbs
Sea salt and freshly ground black pepper Season generously

Ingredients

For the Mediterranean Sauce
1 tsp Olive oil plus extra for brushing
1 Large onion peeled and chopped
3 Cloves garlic crushed

🍅 Creamy Tomato Pasta – A Quick & Comforting Classic! 🍝

Craving a cozy, delicious dinner that’s ready in under 30 minutes? This creamy tomato pasta is the perfect blend of rich tomato flavor, silky creaminess, and comforting carbs. Ideal for busy weeknights or a quick lunch fix!

🛒 Ingredients:

300g pasta (penne or your favorite)

1 tbsp olive oil

2 garlic cloves, minced

1 small onion, finely chopped

400g canned chopped tomatoes

100ml double cream

1 tsp dried oregano

Salt & pepper, to taste

Fresh basil, for garnish

Grated parmesan (optional)

👩‍🍳 Directions:

Cook pasta according to package instructions. Reserve ½ cup of pasta water.

In a pan, heat olive oil and sauté garlic and onion until soft.

Add chopped tomatoes, oregano, salt, and pepper. Simmer for 10 minutes.

Stir in the cream and cook for 2-3 more minutes.

Add the drained pasta and a splash of pasta water. Mix until creamy.

Garnish with fresh basil and parmesan. Serve hot!

• 2 ½ cups milk (2% or whole preferred)
• 2 teaspoons minced garlic
• 1 teaspoon onion powder
• 1 teaspoon Italian seasoning
• ½ teaspoon salt
• ¼ teaspoon ground pepper
• 3 cups Colby Jack cheese, shredded
• 1 tablespoon fresh chopped parsley

👩‍🍳 Directions:

1️⃣ Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
2️⃣ Shred the rotisserie chicken and set aside. Rinse frozen mixed vegetables under warm water to thaw.
