Most flour brands strip the bran, then bleach it, then fortify it with artificial vitamins and minerals that do more long-term harm than good. Because it is not refined, freshly milled flour preserves high levels of Vitamin E, B vitamins (folate, niacin, thiamine), and minerals like iron, phosphorus, and zinc. It is also high in fiber which helps with digestion and helps regulate blood sugar.

My first bread bake this year. After a few weeks of not baking, I wasn’t sure if I had forgotten how. 🤣 this is a 50% whole wheat loaf from organic, freshly milled wheat. Happy New Year!
