2 large red bell peppers (cleaned and diced)

1 medium head green cabbage (shredded)
1 large red onion (diced)

1 cup fresh cilantro (coarsely chopped)
6 medium garlic cloves (minced)
The Pickling Liquid:
3 cups cider vinegar
3 cups white vinegar
2 cups water
1/2 cup granulated sugar
2 tablespoons pickling salt

2 teaspoons ground coriander

bacon cheeseburger meatloaf!

Ingredients:
• 1 1/2 pounds ground beef (85-90% lean)
• 8 slices bacon
• 1 1/2 cups shredded cheddar cheese
• 1 cup rolled oats
• 1 cup dry Stove Top Stuffing mix
• 1/2 cup mayonnaise
• 1 large egg
• 1 teaspoon salt
• 1 cup ketchup
• 1/3 cup prepared yellow mustard
• 1 tablespoon brown sugar

Instructions:
1. Preheat oven to 350°F.
2. Chop bacon into bite-sized pieces and fry in a hot skillet until almost crisp. Drain and add to a large bowl.
3. Add beef, cheese, oats, stuffing mix, mayonnaise, egg, and salt to the bowl with the bacon.
4. In a small bowl, combine 1 cup ketchup and 1/3 cup mustard. Add half of this mixture to the meatloaf. Add the 1 tablespoon brown sugar to the remaining ketchup and mustard mixture and set aside for the glaze.
5. Use your hands to combine the meatloaf mixture until just mixed. Shape into a loaf (about 8x4 inches) in a baking dish.
6. Spread the reserved ketchup and mustard glaze over the meatloaf. 7. Bake for 45 minutes, or until a thermometer reads 160°F in the center.
8. Let rest for 10 minutes before slicing and serving.

Cheesy Steak & Chimichurri Bread

Ingredients:
• 1 loaf of crusty bread (like French bread or ciabatta)
• 1 lb thinly sliced steak (e.g., sirloin, ribeye)
• 2 cups shredded mozzarella or provolone cheese

• For the Chimichurri:
◦ 1 cup fresh parsley, finely chopped
◦ 1/2 cup fresh cilantro, finely chopped (optional) ◦ 2-3 cloves garlic, minced
◦ 1/4 cup red wine vinegar
◦ 1/2 cup olive oil
◦ 1/2 tsp red pepper flakes (or to taste) ◦ Salt and black pepper to taste

Instructions:
1. Make the Chimichurri: In a bowl, combine all chimichurri ingredients. Mix well and let it sit for at least 15 minutes for the flavors to meld.
2. Cook the Steak: Season the thinly sliced steak with salt and pepper. Sear quickly in a hot pan with a little oil until cooked to your liking. Set aside.
3. Assemble the Bread: Slice the bread lengthwise and hollow out a bit of the inside if it's too dense. Layer the cooked steak on the bottom half of the bread.
4. Add Cheese & Bake: Top the steak generously with shredded cheese. Spoon a good amount of the chimichurri over the cheese. bunch of folks are making online, you're looking at some yummy steak and corn tacos with chimichurri. Here's a quick recipe inspired by what I found:

Ingredients:
• For the Steak: ◦ Flank or skirt steak ◦ Olive oil ◦ Salt, black pepper, garlic powder, cumin, chili powder (or your favorite taco seasoning) • For the Chimichurri: ◦ Fresh parsley and/or cilantro, finely chopped ◦ Minced garlic ◦ Red wine vinegar ◦ Olive oil ◦ Red pepper flakes (optional, for a little kick) ◦ Salt • For the Corn: ◦ Fresh corn (kernels cut from the cob) ◦ Olive oil ◦ Salt • For Assembly: ◦ Corn tortillas ◦ Lime wedges ◦ Optional: crumbled cotija or feta cheese, diced white onion
Instructions:
1. Prep the Steak: Pat the steak dry and rub it generously with olive oil, salt, pepper, garlic powder, cumin, and chili powder. Let it sit for at least 15 minutes, or up to an hour in the fridge if you have time.  2. Make the Chimichurri: Finely chop your fresh parsley and/or cilantro and minced garlic. In a bowl, combine them with red wine vinegar, a good drizzle of olive oil, red pepper flakes (if using), and salt. Stir it all up.  3. Cook the Steak & Corn: Heat a grill or a hot skillet. Rest & Slice: Remove the steak from the grill and let it rest for 5-10 minutes. This keeps it super juicy! Then, slice the steak thinly against the grain.  5. Warm Tortillas & Assemble: Warm your corn tortillas in a dry skillet or directly over a gas flame for a few seconds per side until soft and pliable. Load them up with sliced steak, grilled corn, and a generous spoonful of chimichurri. Add a sprinkle of cheese or diced onion if you like, and a squeeze of fresh lime.

Tired of boring weeknight meals? Craving something quick, healthy-ish, and ridiculously tasty? Look no further! This Ground Beef Pepper Stir-Fry is bursting with bold pepper flavor, tender beef, and crisp bell peppers – all tossed in an irresistible savory sauce that’ll have your family asking for seconds (and thirds!). It’s ready in about 20 minutes and is perfect over steamed rice or noodles. Say goodbye to takeout and hello to your new favorite easy dinner!

Ground Beef Pepper Stir-Fry (20-Minute Magic!)

👉Ingredients:
• 1 lb ground beef • 1 tbsp cooking oil • 1 small onion, diced • 3 cloves garlic, minced • 1 green bell pepper, diced • 1 red bell pepper, diced • 1 tsp freshly ground black pepper (add more if you like it spicy!) • 1 tsp crushed red pepper flakes (optional, for that extra kick!)
Sauce (The Secret Weapon!):
