Southern Pecan Cake

Heirloom Pecan Whisper Cake

Ingredients:

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, room temperature
1 cup sugar
4 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
1 cup chopped pecans
1/2 cup brown sugar
2 teaspoons cinnamon
Directions:

Preheat oven to 350°F (175°C).
In a bowl, mix flour, baking powder, baking soda, and salt.
In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
Gradually add the flour mixture to the butter mixture, alternating with buttermilk, starting and ending with flour mixture. Fold in chopped pecans.
Pour batter into a greased and floured cake pan.
Mix brown sugar and cinnamon, and sprinkle over the top of the batter.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

1 cup granulated sugar
4 large eggs
1 tsp vanilla extract
1/2 cup sour cream
For the Berry Topping:

2 cups mixed berries (strawberries, blueberries, raspberries)
1/2 cup granulated sugar
1 tbsp lemon juice
2 tsp cornstarch dissolved in 2 tbsp water
Directions:

Preheat oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes. Let cool.
In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and sour cream.
Pour the filling over the cooled crust. Bake for 50 minutes, or until the center is set. Cool on a wire rack, then refrigerate for at least 4 hours.
For the topping, combine berries, sugar, and lemon juice in a saucepan over medium heat. Cook until the berries release their juices. Add the cornstarch mixture, and stir until thickened. Cool completely.
Spread the berry topping over the chilled cheesecake before serving.

In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and sour cream.
Blend in pistachio paste until the mixture is uniform in color.
Pour the filling over the crust in the springform pan.
Bake for 55-60 minutes, or until the center is set and the top appears slightly golden.

For the Fudge Frosting:

1 cup butter, softened
3/4 cup unsweetened cocoa powder
4 cups powdered sugar
1/2 cup heavy cream
2 tsp vanilla extract
A pinch of salt
Directions:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder.
Add milk, vegetable oil, eggs, and vanilla to the flour mixture and mix together on medium speed until well combined.
Reduce the speed and carefully add boiling water to the cake batter. Beat on high speed for about 1 minute to add air to the batter.

For the Ganache:

1/2 cup heavy cream
1/2 cup dark chocolate chips
Directions:

Prepare the Cake:

Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a large bowl, mix together flour, sugar, cocoa, baking powder, baking soda, and salt. Add egg, milk, oil, and vanilla; beat until well combined. Stir in boiling water until smooth (batter will be thin).
Pour batter into prepared pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Simple & Sweet Banana Pudding Bliss

Ingredients:

4 cups cold milk
2 packages (3.4 ounces each) instant vanilla pudding mix
1 can (14 ounces) sweetened condensed milk
1 tablespoon vanilla extract
1 package (8 ounces) cream cheese, softened
1 container (8 ounces) frozen whipped topping, thawed
4 large bananas, sliced
1 package (12 ounces) vanilla wafers
Directions:

In a large mixing bowl, whisk together milk and instant pudding mix for 2 minutes until thickened. Stir in sweetened condensed milk and vanilla extract until smooth.
In another bowl, beat cream cheese until smooth. Fold cream cheese into the pudding mixture. Then, gently fold in the whipped topping until no streaks remain.
Arrange a layer of vanilla wafers at the bottom of a 9x13 inch dish. Place a layer of sliced bananas over the wafers.
Spread half of the pudding mixture over the bananas. Repeat layers with remaining wafers, bananas, and pudding mixture.
Cover and chill in the refrigerator for at least 4 hours, or overnight, until set.
Serve chilled, garnished with additional banana slices and vanilla wafers if desired.
