Roast Beef & Cheddar Sandwiches π§
Ingredients
* 1 lb thinly sliced deli roast beef
* 4 onion sandwich rolls
* 1 can cheddar cheese soup
* 1β1Β½ cups beef broth
* 2 tbsp butter
* Black pepper, to taste
Instructions
1. Melt 1 tablespoon of butter in a large skillet over medium heat. Add the beef broth and bring to a gentle simmer.
2. Add the sliced roast beef and season with black pepper. Cook for about 3β5 minutes, just until the beef is warmed through and has soaked up some of the broth.
3. In a small saucepan, heat the cheddar cheese soup over low-medium heat. If itβs too thick, stir in a splash of beef broth until you have a smooth, pourable cheese sauce.
4. Slice the onion rolls and spread the cut sides with the remaining butter. Toast in a skillet or under the broiler until golden.
5. Using tongs, pile the warm roast beef onto the bottom half of each toasted roll.
6. Spoon a generous amount of warm cheddar sauce over the roast beef.
7. Add the top buns and serve immediately. For an extra French-dip style sandwich, serve some of the warm beef broth on the side for dipping.
