White Chocolate Chex Mix

White Chocolate Chex Mix is made with cereal, pretzels, peanuts and M&Ms all coated in white chocolate. This easy white chocolate chex mix recipe is salty and sweet and comes together in less than 5 minutes!

Prep Time
5 minutes mins

Ingredients

5 cups mini pretzels
5 cups Honey Nut Cheerios
5 cups Corn Chex
2 cups salted peanuts
1 lb. M&M's
2 package white chocolate chips 12 oz. each
3 tablespoons coconut oil vegetable oil works fine too

Instructions

Line a baking sheet with wax paper, set aside for later use.

Combine the pretzels, Cheerios, Chex, peanuts and M&M's in a large bowl. Set aside.
In a separate bowl, heat the white chocolate chips and oil in the microwave for one minute. Stir, and then microwave for one more minute. Stir until smooth and completely melted.
Pour the melted chocolate over cereal mixture. Mix well and then spread onto a baking pan lined with wax paper.

Let cool for 20-30 minutes and then break apart. Serve in a large bowl or store in an air tight container.

Banana Bread With Pecans (or Walnuts)

** INGREDIENTS **

2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
4 overripe bananas
1 cup sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
2 large eggs
1 teaspoon pure vanilla extract
1 cup pecans (or Walnuts) , chopped

Confectioners' sugar, for dusting

** DIRECTIONS **

1. Preheat oven to 350 degrees F and lightly grease a 9 by 5-inch loaf pan.

2. In a large bowl, combine the flour, baking soda, and salt; set aside.

3. Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture.

4. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for a good 3 minutes; you want a light and fluffy banana cream.

5. Add the melted butter, eggs, and vanilla; beat well and scrape down the sides of the bowl.

6. Mix in the dry ingredients just until incorporated; no need to overly blend.

7. Fold in the nuts and the mashed bananas with a rubber spatula.

8. Pour the batter into the prepared loaf pan. Give the pan a good rap on the counter to get any air bubbles out.

9. Bake for about 1 hour and 5 minutes, until golden brown and a toothpick inserted into the center of the loaf comes out clean.

Don't get nervous if the banana bread develops a crack down the center of the loaf; that's no mistake, it's typical.

Rotate the pan periodically to ensure even browning.

Cool the bread in the pan for 10 minutes or so, and then turn out onto a wire rack to cool completely before slicing.

Toast the slices of banana bread, dust with confectioners' sugar, and serve.
