Layer Cake with Boysenberry😍😋🍰

Ingredients:
For the Cake:

2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
2 teaspoons vanilla extract
1 1/4 cups whole milk
For the Boysenberry Filling:

2 cups fresh boysenberries (or thawed frozen berries)
1/2 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
For the Frosting:

2 cups heavy cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
Instructions:
Preheat the oven to 350°F (175°C). Grease and flour three 8-inch cake pans.

Make the Cake Batter:

In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream together butter and sugar until light and fluffy.
Beat in eggs one at a time, then stir in vanilla.
Gradually add the dry ingredients to the wet ingredients, alternating with milk. Begin and end with the dry ingredients.
Divide the batter evenly among the prepared pans and smooth the tops.
Bake the Cake:

Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Prepare the Boysenberry Filling:

In a saucepan, combine boysenberries, sugar, cornstarch, and lemon juice.
Cook over medium heat until the mixture thickens, stirring constantly. Remove from heat and let it cool.
Make the Frosting:

In a chilled bowl, whip the heavy cream until it begins to thicken.
Add powdered sugar and vanilla extract. Continue whipping until stiff peaks form.
Assemble the Cake:

Place one cake layer on a serving plate. Spread a layer of boysenberry filling on top.
Add the second cake layer and repeat the filling. Top with the third cake layer.
Frost the entire cake with the whipped cream frosting.
Optional: Garnish with fresh boysenberries on top.

Chill the cake for at least 2 hours before serving.
