Thru trial and error, we are pleased with this current recipe. We use it for so many things but especially as a base for salad dressings! We enjoy having a "scratch kitchen". This is quicker and cheaper than a trip to the store!

1 egg, juice of 1/2 lemon (~1 tbsp), 1/2 tsp salt, 1/2 tsp Dijon mustard (more or less to taste), 1 cup neutral oil (we prefer extra light olive oil)

Quick tip - Leave a little oil out of the emulsification to keep a spreadable consistency. It can get thick like cream cheese if you over-blend.

Life has ebbs and flow. When you can, prepare yourself for the future, and you'll be so grateful you did.

Canning this past couple of months has helped this week when I haven't been up for prepping dinner. In the meantime, I've put off making oregano oil and ended up having to purchase. I won't let that happen again!

I made a small batch this time. I read you can use a heating method to have it ready quickly, but I wonder if that destroys any nutrients?

What is your preferred method of making oregano oil? Or do you buy yours (no judgment here!)?

Fun fact: Brussel sprouts now are not the same as they were!

Depending on your age, you may have a disdain for them due to the bitter, stinky, earthy flavor you remember them having from your childhood. Through selective breeding (not GMO), they now have a much more pleasant flavor. A common favorite of ours is roasted with sea salt.

Would you be willing to try modern brussel sprouts? If you're a fan of them already, what is your favorite way to prepare and eat them?

Pinto beans yielded almost a half cup less per pound than the black beans and white beans for a total of only 4 pints. I added from another bag to maximize production for that 3 hour waterbath.
