Salsa de Tomatillo y Chile de Árbol 🌶️

18 medium tomatillos
2 large handfuls dried chile de árbol
2 garlic cloves
Water as needed
Salt to taste

Instructions 📝
Char the garlic directly on a comal or skillet. Toast the chile de árbol in a dry pan until fragrant. Don't skip this step.
Char the tomatillos until blistered and soft.
Add everything to a blender with a little water and salt. Blend until smooth.
Taste and adjust salt as needed.

Fair warning ‼️ it is really spicy. But that's exactly how it's supposed to be. 🌶️

Every culture has things worth celebrating. And every culture has things worth examining. 🔎

Some of these conversations have started online. But the patterns have been around for so long they started to feel normal.

I love my culture, but there’s always room for improvement.

We all grew up watching novelas, and the actors and actresses who brought those stories to life were incredibly talented. But it would have been nice to see more diversity in who was given those protagonist and romantic-lead roles, to see more of the people who actually make up our communities reflected at the center of the story.

Whether you’re the morenita who was made to feel like less, the one who got mistaken for something you’re not, the one who succeeded and still couldn’t escape the jealousy, or the one who dreaded family gatherings because of the body comments, I want to hear your story. 👇🏼

Carne a la Mexicana con Nopales 🌵

Carne a la mexicana is already a staple in this house, but I’ve been sneaking nopales into everything lately and this was such a good addition. We didn’t grow up adding them to this dish but once you try it you’ll wonder why you ever left them out.

Easy weeknight meal that comes together fast 👩🏻‍🍳

Ingredients 👇🏽
3 lbs beef loin flap or any cut of your choice
1 green bell pepper, cut into strips
1 onion, cut into strips
2 tomatoes, cut into strips
1½ lbs cooked nopales, rinsed
Oil
Your favorite all purpose seasoning
Ancho chile powder to taste
28 oz El Pato hot tomato sauce

Instructions 📝
Boil nopales until cooked, rinse well and set aside.
Cut bell pepper, onion, tomato, and meat into strips. Heat oil in a pan and cook the meat with your all purpose seasoning. Add veggies and ancho chile powder and sauté together. Add the full can of El Pato sauce and nopales. Let everything simmer for a few minutes until the flavors come together.

Refried Lentils 😋

Refried beans will always have a place in my kitchen, but so will these now. Lentils are slightly higher in fiber and protein than pinto beans, and for a lot of people they tend to be a little easier on the stomach too.

Same comfort, even better for you!

Refried Lentils Ingredients
For boiling:
2 cups green lentils, rinsed
1 bay leaf
¼ large white onion
2 garlic cloves
6 cups water
Salt to taste
For frying:
Oil
¼ white onion, diced
1 garlic clove, minced
Ancho chile powder to taste
Ground cumin to taste
Salt to taste

Instructions 📝
Add lentils, onion, garlic, bay leaf, water, and salt to a pot. Boil until lentils are fully cooked and tender.
In a separate pan heat oil and sauté diced onion. Add ancho chile powder and cumin and let the spices bloom. Add minced garlic then add the cooked lentils. Mash to your desired consistency or blend for a smoother texture.
Season with more salt to taste.

The last time I went to Mexico I was a teenager. I’m in my thirties now.

My husband has never been.

I honestly don’t know how our parents managed to make those trips happen. Everything is so expensive now and we are out here just trying to keep up with the cost of living on this side of the border too. 🇺🇸

This post is for some of us, not all. I know plenty of Latinos 🤎 who have kept those connections strong and that’s beautiful. I still call my grandmother in Mexico. But if I’m being honest, the relationships I had with my tíos and tías existed mostly when I was a kid. Life just looks different now on both sides.

What gives me hope is that when my parents eventually build their retirement home over there, maybe things will look a little different. Maybe there’s still a version of this where the distance shrinks again. 🇲🇽

But for now I think a lot of us are just trying to figure out what family across borders looks like for our generation.
