Herb-Roasted Chicken Thighs with Garlic Potatoes & Honey Glazed Carrots
Golden, caramelized chicken with garlicky potatoes and sweet-slicked carrots in one cozy pan.
It’s a heartwarming dinner — crisp-edged, deeply savory, and kissed with honey’s soft sweetness.
Ingredients
5 bone-in, skin-on chicken thighs
1 lb baby potatoes, halved
3 large carrots, peeled and cut into chunks
4 cloves garlic, minced
3 tbsp olive oil
2 tbsp butter, melted
2 tsp fresh thyme leaves (or 1 tsp dried thyme)
1 tsp rosemary
1/2 tsp paprika
1 tbsp honey
Salt and freshly cracked pepper, to taste
Optional: chopped parsley for garnish
Instructions
Preheat oven to 425°F (220°C).
In a small bowl, stir together olive oil, butter, garlic, thyme, rosemary, paprika, salt, and pepper.
Place chicken thighs on a large sheet pan. Add potatoes and carrots around them.
Drizzle everything with the herb-garlic mixture, tossing to coat evenly.
Roast for 30 minutes, then drizzle carrots lightly with honey. Stir slightly to coat.
Continue roasting for another 15–20 minutes, until chicken skin is golden and crispy and vegetables are tender.
If you like extra-crisp skin, broil on high for 2–3 minutes at the end.
Rest for 5 minutes before serving, letting the flavors settle beautifully.
