🌽🍗 Street Corn Chicken Casserole 🍗🌽

A creamy, cheesy casserole with sweet pops of corn in every bite.
All the goodness of Mexican street corn baked into one cozy, comforting dish.

Ingredients
3 cups cooked, shredded chicken​
3 cups corn, fresh or frozen​
1 cup sour cream or full-fat Greek yogurt​
⅓ cup mayonnaise​
1 cup crumbled Cotija cheese, divided​
1 ½ tsp chili powder​
1 tsp garlic powder​
½ tsp cumin​
Juice of 1 lime​
Fresh cilantro, for serving​

Instructions
First, preheat your oven to 375°F.​
In a large bowl, whisk together the sour cream, mayonnaise, lime juice, chili powder, garlic powder, and cumin.​
Gently stir in the shredded chicken, corn, and about half of the crumbled cheese.​
Spread the mixture into a 9x13 baking dish.​
Sprinkle the rest of the Cotija cheese over the top.​
Bake for 30-35 minutes, or until it's hot and bubbling at the edges.​
Let it cool for a few minutes, then sprinkle with fresh cilantro before serving.​

Herb-Roasted Chicken Thighs with Garlic Potatoes & Honey Glazed Carrots

Golden, caramelized chicken with garlicky potatoes and sweet-slicked carrots in one cozy pan.

It’s a heartwarming dinner — crisp-edged, deeply savory, and kissed with honey’s soft sweetness.

Ingredients
5 bone-in, skin-on chicken thighs
1 lb baby potatoes, halved
3 large carrots, peeled and cut into chunks
4 cloves garlic, minced
3 tbsp olive oil
2 tbsp butter, melted
2 tsp fresh thyme leaves (or 1 tsp dried thyme)
1 tsp rosemary
1/2 tsp paprika
1 tbsp honey
Salt and freshly cracked pepper, to taste
Optional: chopped parsley for garnish

Instructions
Preheat oven to 425°F (220°C).
In a small bowl, stir together olive oil, butter, garlic, thyme, rosemary, paprika, salt, and pepper.
Place chicken thighs on a large sheet pan. Add potatoes and carrots around them.
Drizzle everything with the herb-garlic mixture, tossing to coat evenly.
Roast for 30 minutes, then drizzle carrots lightly with honey. Stir slightly to coat.
Continue roasting for another 15–20 minutes, until chicken skin is golden and crispy and vegetables are tender.
If you like extra-crisp skin, broil on high for 2–3 minutes at the end.
Rest for 5 minutes before serving, letting the flavors settle beautifully.

Ingredients
1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
1 tbsp olive oil
4 tbsp butter, divided
4 cloves garlic, minced
1 tsp Cajun seasoning
1/2 tsp smoked paprika
1/4 tsp black pepper
1 lb bowtie pasta
4 cups heavy cream
4 oz cream cheese, softened
1 cup shredded mozzarella cheese, plus more for topping
1/2 cup grated Parmesan cheese
Salt to taste
Optional: Crushed red pepper flakes for extra spice

Instructions
Bring a large pot of salted water to a boil and cook bowtie pasta until al dente. Drain and set aside.
In a large skillet, heat olive oil and 2 tbsp butter over medium heat. Add chicken, Cajun seasoning, paprika, black pepper, and salt; cook until golden and fully cooked through. Remove from the skillet and set aside.
In the same skillet, melt the remaining 2 tbsp butter. Add minced garlic and cook gently until fragrant, about 1 minute.
Pour in heavy cream and add the softened cream cheese, whisking until smooth and slightly thickened.
Stir in mozzarella and Parmesan cheese, letting them melt into a silky sauce.
Add the cooked pasta and chicken back into the pan, tossing everything together until coated in the creamy sauce.
Sprinkle a bit more mozzarella on top, cover briefly to let it melt, and finish with red pepper flakes if you like spice.
