Sloppy Joe Grilled Cheese
📋 Ingredients:
• 1 lb Lean ground beef (93/7) or ground turkey
• 1/2 cup Rao’s Homemade Marinara (or any no-sugar-added tomato sauce)
• 2 tbsp Tomato paste
• 2 tsp Yellow mustard
• 1 tsp Garlic powder
• 1 tsp Onion powder
• 2 tbsp Powdered erythritol or monk fruit sweetener (allulose also works great for melting)
• 2 tbsp Water
• 4 slices Keto Hawaiian square bread
• 1 cup Shredded cheddar cheese (or 4 slices of cheddar/provolone)
• 2-3 tbsp Butter or mayonnaise (for toasting the bread)
• Salt and pepper to taste
🧑🍳 Instructions:
1. Brown the Meat:
In a skillet over medium-high heat, brown the ground beef or turkey, breaking it up into very fine crumbles. Drain any excess fat.
2. Simmer the Sauce:
Turn the heat down to low. Add the marinara, tomato paste, mustard, garlic powder, onion powder, sweetener, and water. Stir well and let it simmer for 3–5 minutes until the sauce is thick and binds to the meat. Season with salt and pepper to taste. Remove from heat.
3. Assemble:
Butter one side of each slice of keto Hawaiian bread. On the unbuttered side of two slices, place a layer of cheese, a generous scoop of the sloppy joe mixture, and another layer of cheese (this acts as the "glue"). Top with the remaining bread slices, buttered side out.
4. Toast:
Place the sandwiches in a clean skillet over medium-low heat. Press down gently. Cook for 3–4 minutes per side until the bread is golden brown and the cheese is completely melted.

Finely grate a quarter cup of zucchini or yellow squash directly into the meat sauce while it simmers. Because the sloppy joe sauce is thick, dark, and flavorful, the grated veggies completely melt into the texture and vanish from sight.
