Ground Beef and Cauliflower Shepherd’s Pie
Ingredients:
The Velvet Cauliflower Mash:
• 3 bags (10 oz each) frozen cauliflower rice
• 2 tbsp cream cheese
• 1/4 cup grated Parmesan cheese
• 2 tbsp butter
• 1/4 tsp garlic powder
• 1/4 cup milk
• Salt and black pepper to taste
Optional: add 1 cup of cooked real mashed potatoes
The Savory Beef Filling:
• 1 lb lean ground beef (90% or 93% lean)
• 1 tbsp olive oil
• 1 small yellow onion, finely diced
• 2 cloves garlic, minced
• 1 cup sliced mushrooms (optional)
• 1 cup frozen diced mixed vegetables (carrots, peas (optional; green beans and corn)
• 2 tbsp tomato paste
• 1 cup beef bone broth
• 1 tbsp Worcestershire sauce
• 1 tsp dried thyme
• Salt and black pepper to taste
Cooking Steps:
1. Prep the Cauliflower Mash
Microwave the frozen cauliflower rice according to the bag instructions until hot. Dump it into a clean kitchen towel or a fine-mesh strainer and press/squeeze out as much water as possible. Do not skip this, or the topping will liquefy in the oven!
2. Blend the Topping
Transfer the hot, squeezed cauliflower to a food processor or blender. Add the cream cheese, Parmesan, butter, garlic powder, salt, pepper and milk. Blend on high until completely smooth and puree-like. Set aside.
3. Brown the Beef & Veggies
Preheat your oven to 400°F (200°C). Heat olive oil in a large oven-safe skillet (like cast iron) over medium-high heat. Add the onion, garlic, frozen vegetables, and mushrooms (if adding). Cook for 5 minutes until soft. Add the ground beef, breaking it up with a spoon, and cook until completely browned and no pink remains (reaching a safe 160°F).
4. Simmer the Gravy
Stir the tomato paste, dried thyme, salt, and pepper into the beef. Pour in the bone broth and Worcestershire sauce and bring to a simmer. Let it bubble gently for 5 to 8 minutes until the liquid reduces and coats the meat in a thick, rich gravy.
5. Assemble and Bake
If your skillet isn't oven-safe, transfer the beef mixture to an 8x8 baking dish. Spread the cauliflower mash evenly over the top, smoothing it with a spatula. Use the tines of a fork to make little ridges (they get wonderfully crispy). Bake for 15-20 minutes until the edges are bubbling and the top starts to golden.
