Mixed Fruit & Muesli Bowl

Ingredients (Serves 2)
1/2 cup muesli
1/2 cup milk
1/2 cup peeled, sliced banana
1/2 cup sliced plum
1/2 cup diced apple
1/2 cup peeled, diced honeydew melon
1/4 cup peeled, sliced kiwi
2 tablespoons blueberries
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon ground cinnamon
2 tablespoons popped amaranth

Directions
1. Mix the muesli with milk in a medium serving bowl or in two individual bowls.
2. In a second medium bowl, gently toss the fruit with the lemon juice.
3. Pile the fresh fruit on top of the soaked muesli. Sprinkle with the cinnamon and popped amaranth, if using.

Feel the Mediterranean spring breeze with Chef Reba as you taste the region's unique flavors! We'll start by experimenting with spice combinations with a Spiced Lentil Salad with Dried Apricots. Next you'll enjoy Roasted Carrots with Garlicky Greek Yogurt, seasoned with a nutty homemade Dukkah. We'll continue our exploration with a flavorful Mediterranean Chicken with Tomatoes and Olives; then finish off the meal with a warm slice of Olive Oil Orange Cardamom Cake.

We have space available in a newly added date for our upcoming All About Masa! cooking class. Learn how to make El Salvadoran Bean and Cheese Pupusas using masa harina. They'll be served with a quick pickled Curtido and Salvadoran Salsa Roja. Then, enjoy delicious Venezuelan-style Arepas, stuffed with roast pork and avocado, which uses a completely different type of masa - masarepa. Finish the meal with a sweet Coconut Flan.
