Pulling a heavy skillet out of the oven with all that bubbling white sauce and melted cheese over the edges is such a win. I didn't even bother with plates and just put the whole pan right in the middle of the table. 🥘

It is a creamy, tangy twist on the classic version with plenty of shredded poultry tucked into soft tortilla pieces. The green chiles give it just enough of a kick without being overwhelming for a casual weeknight meal.

1 lb shredded cooked chicken
8 small flour tortillas
8 oz sour cream
4 oz canned diced green chiles
10 oz canned cream of chicken soup
2 cups shredded monterey jack cheese
1 tsp onion powder
1/2 cup chicken broth

I chopped the flour tortillas into bite-sized strips and set them aside while I prepped the sauce.
In a large skillet I whisked together the sour cream, green chiles, cream of chicken soup, and chicken broth until the mixture was smooth.
I stirred in the onion powder and the shredded cooked chicken, letting it heat up over a medium flame.
I folded the tortilla strips directly into the creamy chicken mixture until every piece was well coated.
I smoothed the top of the skillet and smothered the entire thing in a thick layer of shredded monterey jack cheese.
I popped the pan under the broiler for a few minutes until the cheese was spotted with brown and perfectly melted.

Using a rotisserie chicken from the store makes this come together so much faster when you are in a rush. 🧀

Phoebus Fall Festival is coming Saturday October 11th. It is a rain or shine festival. And yes it looks like it may rain. I just wanted to speak for myself and so many other hard working artist and crafters. The event will only cancel if the weather becomes dangerous. As a vendor we have paid for our space, we will not be refunded. We have worked so hard for this event as we do for each event. Please come out, bring an umbrella, wear your rain boots. Hey, on a pisive note you won't have to fight the crowds. Lol. We pour our heart, soul, blood sweat and tears into our craft. For many of us, myself included, its not just a hobby it's our job, our income. I don't just work on Saturday. On most days I start in the morning and work through the wee hours in the night. I have had shoulder and hand surgery. I routinely get cortisone injections. I love what I do and am so blessed to have this opportunity, but it is hard work. And let's not forget we set up and take down a store at each event. Arriving hours before and staying hours after the show is over. I love my customers. There is no better compliment than a repeat customer, the ones who look for me at a show, the ones who bring their friends to see my work. Please keep in mind we hear you. We hear your compliments, we hear you when you say things like"I can make that." We hear it all, so please be kind, kindness if free. Rant over. I truly appreciate all the support from my customers, the ones who buy and those who just look and appreciate. Thank you!
