SHRIMP ROLLS 🦐
6 servings

Ingredients:
1 pound medium shrimp, peeled and deveined (I love Argentinian Red)*
1 large lemon (add ½ to the cooking water)
1 ½ tsp salt | 2 tsp kosher salt (add half the salt to the cooking water)
1 medium white onion
½ green bell pepper
½ cup cherry tomatoes
¼ cup finely chopped cilantro or parsley
6 tbsp unsalted butter, melted
½ tsp ground white pepper (optional)
Sweet paprika
6 hot dog buns, preferably brioche, which are slightly sweeter (and extra delish)
6 tbsp cilantro mayo (find the recipe on my IG )

Boil the shrimp for two minutes in water seasoned with salt and lemon juice (the lemon helps with any strong odors). Scoop the shrimps out and pat them dry. Reserve in a large bowl.
Finely chop the onion, bell pepper, cilantro, and halve the tomatoes. Mix everything together, season, then add the melted butter. Serve immediately.
If you'd like to make it in advance, make sure to only salt it when it's time to serve. Otherwise, the vegetables will release too much liquid. Bon appétit!

SANDUÍCHES DE CAMARÃO (6 generosos sanduichinhos)

Ingredientes:
1/2 kg de camarões médios, descascados e limpos (eu amo o vermelho argentino)*
1 limão grande (adicione ½ à água do cozimento)
1 ½ colher de chá de sal | 2 colheres de chá de sal kosher (adicione metade do sal à água do cozimento)
1 cebola branca média
½ pimentão verde
½ xícara de tomate cereja
¼ xícara de coentro ou salsinha picados
6 colheres de sopa de manteiga sem sal, derretida
½ colher de chá de pimenta branca moída (opcional)
Páprica doce
6 pães de cachorro-quente, de preferência brioche, que são um pouco mais doces (e extra deliciosos)
6 colheres de sopa de maionese de coentro (encontre minha receita no instagram )

Cozinhe os camarões por dois minutos em água temperada com sal e suco de limão (o limão ajuda a eliminar odores fortes). Retire os camarões e seque-os. Reserve em uma tigela grande.
Pique a cebola, o pimentão, o coentro e corte ao meio os tomates. Misture tudo, tempere e adicione a manteiga derretida. Sirva imediatamente.
Se você quiser fazer com antecedência, certifique-se de salgá-lo apenas na hora de servir. Caso contrário, os vegetais liberarão muito líquido. Bon appétit!

Ingredients:
For the cake
4 eggs
1 1/2 cups sugar
3/4 cup full-fat yogurt
3/4 cup vegetable oil
1/2 tsp almond extract
1 cup almond flour
1 1/4 cup all-purpose flour
1 tsp kosher salt | 1/2 tsp salt
1 tsp baking powder

For the icing
1 1/2 sticks of unsalted butter or 12 tbsp
1/2 cup chopped cherries + 1 tbsp sugar
2 cups confectioner’s sugar

Oven at 350 for about 40 minutes.

Bolo de Amêndoas com Buttercream de Cerejas Frescas

Ingredientes:
Para o bolo
4 ovos
1 1/2 xícaras de açúcar
3/4 xícara de iogurte integral
3/4 xícara de óleo vegetal
1/2 colher de chá de extrato de amêndoas
1 xícara de farinha de amêndoas
1 1/4 xícara de farinha de trigo
1/2 colher de sal
1 colher de fermento em pó

Para a cobertura
1 1/2 tablete de manteigas sem sal (ou 12 colheres de sopa)
1/2 xícara de cerejas picadas + 1 colher de sopa de açúcar
2 xícaras de açúcar de confeiteiro

Forno a 180 por cerca de 40 minutos.
