Nopal cactus is not only an important part of our diet, it is host to an insect called Grana Cochinilla, that has been used as a natural pigment since pre-hispanic times. Once the Cochinilla is harvested and dried, it is used to create orange, pink and red shades to pigment our mats. There has been a resurgence in the use of natural pigments in recent decades due to widespread health concerns regarding the continued reliance on synthetic substances to dye commercial products.
