🍝✨ Creamy Alfredo Pasta with Mushrooms

Silky fettuccine coated in a rich, creamy Alfredo sauce with tender mushrooms and plenty of melted cheese. This comforting pasta is full of flavor and comes together beautifully for an easy, satisfying meal.

Ingredients:

• 12 oz fettuccine
• 2 tablespoons butter
• 8 oz mushrooms, sliced
• 2 garlic cloves, minced
• 1½ cups heavy cream
• 1 cup grated Parmesan
• 1 cup shredded mozzarella
• 1 teaspoon dried parsley
• Salt, to taste
• Black pepper, to taste

Instructions:

Cook the fettuccine in salted boiling water until al dente. Reserve a little pasta water, then drain.

Melt the butter in a large skillet over medium heat. Add the mushrooms and cook until tender and lightly golden.

Stir in the garlic and cook briefly until fragrant.

Pour in the heavy cream and let it simmer gently for a few minutes. Add the Parmesan, mozzarella, and dried parsley, stirring until the cheese is completely melted and the sauce is smooth.

Fold the cooked fettuccine into the sauce, tossing well to coat every strand. Add a splash of the reserved pasta water if needed to achieve a silky consistency.

Serve immediately with extra Parmesan and freshly ground black pepper, if desired.

💡 Tip:

✨ Reserve a little pasta water before draining—it helps create an even creamier sauce that clings perfectly to the pasta.

🍲 Cool cooked soup completely before putting the lid on to refrigerate.

Trapped heat creates condensation inside, which dilutes the rich flavor and speeds up spoilage.

📝 Ingredients

1 eggplant
2 garlic cloves, minced
5 tablespoons olive oil
Salt, to taste
Black pepper, to taste
Oregano, to taste
Paprika, to taste
Italian seasoning, to taste
1 tomato, sliced
100 g mozzarella cheese, shredded or sliced
Extra oregano, for topping

👩‍🍳 Instructions

1. Prepare the eggplant
Slice the eggplant into round slices and arrange them in a lightly greased baking dish.

2. Make the seasoning mixture
In a small bowl, combine the olive oil, minced garlic, salt, black pepper, oregano, paprika, and Italian seasoning.

Brush the mixture generously over each eggplant slice.

3. Assemble
Place a slice of tomato on top of each eggplant round.

Sprinkle the mozzarella evenly over the top, then finish with a little extra oregano.

4. Bake
Bake in a preheated oven at 350°F (180°C) for 30 minutes, or until the eggplant is tender and the cheese is melted and lightly golden.

🍽️ Serve
Serve hot as a side dish, a light meal, or with crusty bread and a fresh salad.

💡 Pro Tip
For an even richer flavor, let the seasoned eggplant rest for 10 minutes before baking so it can absorb the herbs and garlic.
