It’s time! ❄️🎄🎅🏼 Mmmm...these little are so delicious. I made a vegan hot chocolate mix and combined it with hot water and soy milk to make this creamy delicious beverage. Here’s my recipe (save it for later):

VEGAN HOT CHOCOLATE
Makes 1 cup

2 tablespoons raw cacao powder
1 1/2 teaspoons organic sugar
1 1/2 teaspoons organic powdered sugar
1/2 cup hot water
1/2 cup soy milk
4-5 mini marshmallows

Combine all dry ingredients together in a mug. Add hot water and soy milk and stir well. Top with marshmallows and enjoy.

For a sugar-free version, substitute the sugars with 6 drops stevia extract.

Have you ever made your own homemade cheese? It’s super easy, here’s my recipe (save this post for easy reference):

VEGAN PARMESAN
Makes 1 cup

1 cup raw cashews
3 tablespoons nutritional yeast
1 teaspoon apple cider vinegar
2 teaspoons yellow miso paste

Directions:
Combine all ingredients into a food processor and process for about 1 minute, or until mixture is crumbling like in this photo.

Sprinkle this onto pasta, pizza or on salads. Store in an airtight container in the fridge for up to one month.

I packed my lunch to-go and took it to the beach in my new Meal Box! I love these so much. For this lunch I made a Kale, Bean, Corn and Avocado salad. Then I packed some carrot slices and a pickle as a side dish.

To make the salad:
Steam the kale for 5 minutes. I used the organic kale from .
Place it into the container.
Top with frozen organic corn and organic white beans (also from TJs)
Sprinkle with h**p seeds.
Add slices of avocado 🥑
Pour about 2 teaspoons rice vinegar on top.

That’s it! I also packed this same lunch in the smaller Meal Box container for my daughter. She loves it because it keeps her food separate. 🥰

I’ve been looking for glass meal prep containers with 2 compartments for quite some time and was thrilled to realize one of my favorite kitchen brands, , offers these! I found them at and also have seen them online at . I purchased two sizes, and then today I went back and bought two more of the larger sized . I love that these are glass because it makes it very easy to reheat food by placing the whole container right into the oven (without the lid). I love the two compartments because it just makes meal prepping more fun when you can put food into little compartments 🥰

This flatbread was so delicious! I sautéed some with mushrooms and added that to the pizza with spinach, olives, and roasted onions. Adding the tempeh made this a very, very filling meal. It was packed with legumes, whole grains, and vegetables. I’m obsessed with these quick and easy pizzas using ingredients!
