Beef and Vegetable Stir-Fry
Yield: 4 servings
Ingredients:
For the Stir-Fry:
1 pound (450 g) beef sirloin or flank steak, thinly sliced against the grain
2 tablespoons vegetable oil (or sesame oil)
1 cup broccoli florets
1 bell pepper (red or green), sliced
1 cup snap peas (or snow peas)
1 medium carrot, thinly sliced
3 cloves garlic, minced
1 teaspoon fresh ginger, minced (or 1/2 teaspoon ground ginger)
2 green onions, sliced (for garnish)
For the Sauce:
3 tablespoons soy sauce
2 tablespoons oyster sauce (or hoisin sauce)
1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
1 tablespoon rice vinegar or sesame oil
1 tablespoon brown sugar (optional, for sweetness)
Instructions:
1. Prepare the Beef:
Marinate (Optional): If you have time, marinate the sliced beef in 1 tablespoon of soy sauce and 1 tablespoon of cornstarch for 15-30 minutes to enhance tenderness and flavor.
2. Prepare the Sauce:
Mix Sauce Ingredients: In a small bowl, combine soy sauce, oyster sauce, rice vinegar, brown sugar, and cornstarch mixed with water. Set aside.
3. Stir-Fry the Beef:
Heat Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over high heat.
Cook Beef: Add the sliced beef in a single layer. Stir-fry for about 2-3 minutes until browned and just cooked through. Remove from the skillet and set aside.
4. Stir-Fry the Vegetables:
Add More Oil: In the same skillet, add another tablespoon of oil. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
Add Vegetables: Add broccoli, bell pepper, snap peas, and carrots. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
5. Combine:
Return Beef: Return the cooked beef to the skillet with the vegetables.
Add Sauce: Pour the prepared sauce over the beef and vegetables. Stir well to combine and cook for another 1-2 minutes until the sauce thickens and coats the ingredients.
6. Serve:
Plate and Garnish: Serve hot over steamed rice or noodles, garnished with sliced green onions.
