🍽️ It’s Sunday — time to share our meal plans for the week!

Last week I mentioned that I needed to make my meals a little more interesting now that my daughter’s wedding is over. Well… turns out a little pasta and a little cheese equals three extra pounds on the scale this week! 🙈
So this week, I’m back to keeping things simple — but not before I splurge a little tonight! 😋

SUNDAY: BREAKFAST FOR DINNER
Pancakes and bacon, because sometimes you just need comfort food! And to make it really indulgent, I’m finishing off with apples and dip for dessert. I LOVE this dip — cream cheese, caramel sauce, and toffee bits:

MONDAY: ROASTED PORK, HOMEMADE APPLESAUCE, ROASTED POTATOES & VEGGIES
I’ll season the pork with a little Pampered Chef seasoning and keep the rest simple.
🍏 The applesauce is the star — it cooks in just 4 minutes once your pressure cooker comes up to pressure, and you control the sugar!

TUESDAY: TACO TUESDAY 🌮
Classic tacos — shells for the family, a bed of lettuce for me.

WEDNESDAY: CHICKEN PARM NIGHT
Air fryer to the rescue!
Dip chicken in egg, coat with panko + breadcrumbs, air fry, then top with a little sauce and mozzarella and continue cooking until melty.
Serve with spaghetti and salad.
(Last week I was supposed to make Salsa Chicken, but forgot to buy salsa… so we had Chicken Parm instead! So this week we're actually having the Salsa Chicken but to keep things fresh for you I wanted to share the Chicken Parm recipe we used last week.)

THURSDAY: BURGERS with HOMEMADE FRIES & SALAD
Potatoes are 0 points on WW, so fries are totally fair game!
Cut your own with the Pampered Chef Rapid-Prep Mandoline, toss with a little oil + seasoning, and air fry. Crispy perfection! 🍟

The girls are working, I have a party, and hubby’s flying solo for dinner… something tells me fast food is on his meal plan. 😉
