Make-Ahead Meal #2: Shepherd’s Pie, “a keeper” according to my husband!

I prepped it according to these instructions:

Instead of baking it in the rectangular Baker, I split the recipe into 2 Brilliance Long Loaf Pans. I didn’t bake them right away. One I put in the fridge for tonight, and the other, in the freezer for another time.
�To Bake At a Later Time:
* Remove it from the fridge about 30–45 minutes before baking to take the chill off (this helps it heat evenly).
* Bake, covered, at 375°F for 25 minutes.
* Then uncover and bake another 15–20 minutes until the top is golden and the filling is bubbling around the edges.

🍲 Prep-Ahead Meal Success!

Tonight I tried the first freezer/make-ahead meal I prepped on Sunday: Chicken and Dumpling Casserole from Emily Bites (recipe here https://emilybites.com/2019/08/chicken-and-dumplings-casserole.html)

Since it wasn’t originally a make-ahead recipe, I made a few adjustments:

Sunday Night Prep:
1️⃣ Pre-cooked the vegetables (from Step 2) and stored in their own baggy.
2️⃣ Pre-cooked the chicken (also Step 2), stored in a separate baggy.
3️⃣ Measured out the flour for Step 3 and kept it in a baggy in the pantry.
4️⃣ Combined the soup ingredients (Step 4) in another baggy.

With the exception of the flour, everything went into a gallon-size ziplock and stored in the fridge.

Tonight’s Assembly
(in the Pampered Chef Stone Rectangular Baker):
1️⃣ Layered the vegetables in the baking dish (I added some frozen corn and peas too).
2️⃣ Spread the chicken over the veggies.
3️⃣ Mixed the pre-measured flour with a cup of milk and poured it over the chicken.
4️⃣ Poured the soup mixture on top.

✅ Tip: Don’t mix – just layer! I baked it a little longer since it was cold from the fridge.

It turned out fantastic… as you can see from the “small” piece my husband "tested" before dinner! 🤦‍♀️

🍽️ It’s Sunday — time to share our meal plans for the week!
What’s on your menu? 👇

Last week I mentioned that I needed to make my meals a little more interesting now that my daughter’s wedding is over. Well… turns out a little pasta and a little cheese equals three extra pounds on the scale this week! 🙈

So this week, I’m back to keeping things simple — but not before I splurge a little tonight! 😋

SUNDAY: BREAKFAST FOR DINNER
Pancakes and bacon, because sometimes you just need comfort food! And to make it really indulgent, I’m finishing off with apples and dip for dessert. I LOVE this dip — cream cheese, caramel sauce, and toffee bits:

MONDAY: ROASTED PORK, HOMEMADE APPLESAUCE, ROASTED POTATOES & VEGGIES
I’ll season the pork with a little Pampered Chef seasoning and keep the rest simple.
🍏 The applesauce is the star — it cooks in just 4 minutes once your pressure cooker comes up to pressure, and you control the sugar!

TUESDAY: TACO TUESDAY 🌮
Classic tacos — shells for the family, a bed of lettuce for me.

WEDNESDAY: CHICKEN PARM NIGHT
Air fryer to the rescue!
Dip chicken in egg, coat with panko + breadcrumbs, air fry, then top with a little sauce and mozzarella and continue cooking until melty.
Serve with spaghetti and salad.

(Last week I was supposed to make Salsa Chicken, but forgot to buy salsa… so we had Chicken Parm instead! So this week we're actually having the Salsa Chicken but to keep things fresh for you I wanted to share the Chicken Parm recipe we used last week.)

THURSDAY: BURGERS with HOMEMADE FRIES & SALAD
Potatoes are 0 points on WW, so fries are totally fair game!
Cut your own with the Pampered Chef Rapid-Prep Mandoline, toss with a little oil + seasoning, and air fry. Crispy perfection! 🍟

The girls are working, I have a party, and hubby’s flying solo for dinner… something tells me fast food is on his meal plan. 😉
