🍚🧀 Crispy Mozzarella Arancini 🧀🍚
These crispy Italian rice balls, filled with gooey mozzarella, are perfect for lunch, dinner, or as an appetizer. You can even freeze them for later!

📋 Ingredients:
🛢️ 1 tablespoon olive oil
🧅 1 small onion, finely chopped
🧄 1 clove garlic, crushed
🍚 1 cup Arborio rice
🍷 1/2 cup dry white wine
🍗 2 1/2 cups hot chicken stock
🍃 1/2 cup frozen peas
🍖 2 ounces finely chopped ham
🧂 Salt and pepper to taste
🧀 1/2 cup grated Parmesan cheese
🥚 2 large eggs
🥛 1 tablespoon milk
🧀 4 ounces mozzarella cheese, cut into cubes
🥣 1/2 cup all-purpose flour
🥣 1 cup dry bread crumbs
🛢️ Vegetable oil for frying

📝 Instructions:

1️⃣ Gather Ingredients:

Collect all your ingredients before starting.

2️⃣ Preheat Oven:

Preheat your oven to 200°F (95°C).

3️⃣ Cook Onion and Garlic:

Heat 1 tablespoon olive oil in a large saucepan over medium heat. Add the finely chopped onion and crushed garlic. Cook and stir until the onion is soft but not browned.

4️⃣ Toast the Rice:

Add the Arborio rice to the pan and cook, stirring frequently, until the rice is lightly toasted, about 2 minutes.

5️⃣ Add Wine:

Pour in the white wine and cook, stirring occasionally, until the liquid has evaporated.

6️⃣ Add Chicken Stock:

Gradually add the hot chicken stock to the rice, about 1/3 cup at a time, stirring and cooking until the liquid is absorbed before adding more.

7️⃣ Add Peas and Ham:

Once all the chicken stock is absorbed, stir in the frozen peas and chopped ham. Season with salt and pepper to taste.

8️⃣ Incorporate Parmesan:

Remove the pan from heat and stir in the grated Parmesan cheese. Transfer the risotto to a large bowl and let it cool slightly.

9️⃣ Add Egg to Risotto:

Beat 1 egg in a small bowl and stir it into the cooled risotto mixture.

🔟 Prepare Breading Stations:
- Beat the remaining egg with 1 tablespoon of milk in a small bowl. Place flour in a second bowl and bread crumbs in a third bowl.

1️⃣1️⃣ Form Arancini:
- Roll 2 tablespoons of risotto into a ball. Press a cube of mozzarella cheese into the center of each ball, then roll to enclose. Lightly coat each ball with flour, dip into the egg and milk mixture, and roll in bread crumbs to coat.

1️⃣2️⃣ Heat Oil:
- Heat vegetable oil in a deep fryer or large saucepan to 350°F (175°C).

1️⃣3️⃣ Fry Arancini:
- Fry the rice balls in batches, turning as needed, until golden brown and crispy. Drain on a paper towel-lined plate and keep warm in the preheated oven.
