Mexican Cornbread Casserole

A hearty and flavorful casserole that combines savory cornbread with a zesty mix of seasoned ground beef, tomatoes, and cheese. Perfect for a crowd or a comforting weeknight meal.

Recipe

Ingredients:
1 lb ground beef
1 medium onion, chopped
1 packet taco seasoning
1 can (14.5 oz) diced tomatoes, undrained
1 can (4 oz) green chilies, chopped
1 cup shredded cheddar cheese
1 box cornbread mix (like Jiffy)
1 egg
1/3 cup milk
1/4 cup sour cream
1 tablespoon olive oil
1/2 teaspoon cumin
Salt and pepper to taste
Directions:
Preheat oven to 350°F (175°C).
Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
Add the chopped onion to the skillet and cook for 3-4 minutes, until softened.
Stir in the taco seasoning, diced tomatoes (with juices), and green chilies. Let simmer for 5 minutes to combine the flavors.
While the beef mixture is simmering, prepare the cornbread mix according to the package instructions. In a medium bowl, combine the cornbread mix, egg, milk, sour cream, cumin, salt, and pepper. Mix until smooth.
Grease a 9x13-inch baking dish and spread half of the cornbread batter in the bottom of the dish.
Layer the beef mixture over the cornbread, then top with the remaining cornbread batter.
Sprinkle shredded cheddar cheese evenly on top.
Bake for 30-35 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
Allow to cool for 5 minutes before slicing and serving.

Big Mac Tater Tot Casserole

This Big Mac Tater Tot Casserole combines all the flavors of a Big Mac with the comfort of crispy tater tots in a delicious, cheesy casserole that's perfect for dinner or a fun family meal.

Big Mac Tater Tot Casserole

Ingredients:
1 lb ground beef
1 small onion, finely chopped
1 tablespoon olive oil
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 (16 oz) bag frozen tater tots
1/4 cup ketchup
2 tablespoons mustard
1/4 cup pickle relish
1/2 cup mayonnaise
1 tablespoon vinegar
1 teaspoon garlic powder
Salt and pepper to taste
Directions:
Preheat oven to 400°F (200°C).
In a large skillet, heat olive oil over medium heat. Add chopped onion and cook for 3-4 minutes, or until soft and translucent.
Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon. Season with salt, pepper, and garlic powder.
Once the beef is cooked through, stir in ketchup, mustard, pickle relish, and vinegar. Remove from heat and set aside.
Spray a 9x13-inch baking dish with cooking spray. Spread the tater tots evenly over the bottom of the dish.
Pour the beef mixture over the tater tots and spread it evenly.
Sprinkle shredded cheddar and mozzarella cheese on top of the beef mixture.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the tater tots are golden brown.
While the casserole bakes, prepare the Big Mac sauce by mixing mayonnaise, ketchup, mustard, pickle relish, and vinegar in a small bowl.
Once the casserole is done, remove from the oven and drizzle the Big Mac sauce over the top.
Serve warm and enjoy!

2 large eggs
1/2 cup all-purpose flour

Directions:

1/2 cup shredded Gruyere cheese
1/2 cup shredded Cheddar cheese
For the Secret Sauce:

1/4 cup mayonnaise
1 tablespoon ketchup
1 teaspoon mustard
For the Sliders:

1 pound ground beef
Salt and pepper to taste
12 small pickles
12 small tomato slices
12 small lettuce leaves
Directions:

Prepare the Cheese Puff Buns:

Preheat oven to 450°F (235°C). Line a baking sheet with a silicone mat.
In a pot, bring water, butter, and salt to a simmer. Reduce heat to medium and stir in flour until a dough forms. Stir vigorously for 2-3 minutes, then transfer to a bowl to cool for 5-10 minutes.
Stir in 1 egg, cayenne, and black pepper until fully incorporated. Repeat with the second egg. Fold in half of the cheese mixture.
Using a small scoop, place 12 balls of dough onto the baking sheet. Sprinkle each with the remaining cheese.
Bake in the center of the oven, immediately reducing the temperature to 375°F (190°C). Bake for 35 minutes, until golden brown. Cool completely.
Make the Secret Sauce:

In a bowl, mix mayonnaise, ketchup, and mustard. Set aside.
Cook the Sliders:

Shape the beef into 12 small patties. Season with salt and pepper.
Cook in a skillet over medium-high heat for 2-3 minutes per side for medium-rare. Let rest for 2-3 minutes.
Assemble:

Slice cheese puffs in half. Spread 1 tablespoon of secret sauce on each bottom half.
Add a beef patty, pickle, tomato, and lettuce. Top with the other half of the bun. Serve immediately.
