This is my favorite way to cook fresh corn. The kernel cutter makes it easy to get all the corn off of the cobs. This was 4 ears of corn, 3 garlic cloves, 2 T butter, a handful of basil ;snipped and salt and pepper. In a skillet, melt butter, add pressed garlic and stir for a few seconds. Add corn and season with salt and pepper, stir for about 2-3 minutes. Add fresh basil.

Vegetarian Dinner on the Grill
I cut up peppers, ๐Ÿซ‘, onions, ๐Ÿง… zucchini and added avocado oil and chipotle seasoning. Grill those while cooking rice ๐Ÿš add some black beans to the cooked rice. The veggies went on top of the rice with some cilantro and a sprinkle of Cotija cheese. Serve with fresh lime ๐Ÿ‹โ€๐ŸŸฉ wedges. Best eaten on the patio โ˜€๏ธ

Strawberry ๐Ÿ“ and Spinach Salad with Toasted Almonds and Poppy Seed Dressing. Itโ€™s perfect for spring! ๐ŸŒท
Dressing
1 lemon
2 tbsp (30 mL) white wine vinegar
1/3 cup (75 mL) sugar
1 tbsp (15 mL) vegetable oil
1 tsp (5 mL) poppy seeds
Salad
1/2 medium cucumber
1/4 small red onion
1 bag (6 oz/175 g) fresh baby spinach leaves (about 4 cups/1 L)
8 oz (250 g) fresh strawberries, hulled and quartered
1/4 cup (50 mL) sliced almonds, toasted
Directions
For dressing, zest lemon to measure 1/2 tsp (2 mL). Juice lemon to measure 2 tbsp (30 mL). Combine zest, juice, vinegar, sugar, oil and poppy seeds in small mixing bowl; whisk until well blended.

Mint Julep! It's Derby time! ๐Ÿ‡
4 mint leaves, heaping tsp powdered sugar, tsp water. Muddle, add lots of crushed ice, pour 3 oz bourbon and a large bunch of mint. I like to cut the straw short so when you take a drink you smell that fresh mint. The traditional cup is silver and it really does keep your drink cold!
