Roasted Garlic Parmesan Zucchini, Squash, and Tomatoes

Ingredients:

2 medium zucchinis, sliced
2 medium yellow squashes, sliced
1 pint cherry tomatoes, halved
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
In a large bowl, combine the sliced zucchinis, yellow squashes, cherry tomatoes, and minced garlic.
Drizzle the olive oil over the vegetables and toss to coat evenly.
Add the grated Parmesan cheese, dried oregano, dried basil, salt, and pepper. Toss again until the vegetables are well-coated with the seasoning.
Spread the vegetables in a single layer on the prepared baking sheet.
Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized.
Remove from the oven and transfer to a serving dish. Garnish with fresh chopped parsley before serving.
