Good evening! Just touching base to let you know what I will be working on this week and to say thankyou to everyone while I took a little time off. My schedule has changed up a bit so in order to continue to take care of my dad one day a week in Sioux City and babysit our grands on a new day, I will just be baking on Thursdays now for pickup on Fridays. I hope this doesn't cause issues for those of you who have preferred bake day of wednesday and pickup on Thursdays. This week I will be making a few new cookies to kick off the fall season. The first is a scratch zucchini bread type cookie with some fun add ins for a wonderful fall cookie. I came up with a new recipe, never measured or wrote things down so it may vary a bit. Its been taste-tested by a few great critiques and got a thumbs up. The next is a chocolate chip type cookie, also with delicious add ins. They may vary, depending on what I have on hand and also keeping with all gluten free. A few things I keep on hand are: reeses pb chips, caramel bits, mini rolos, mini reese pb cups, pumpkin spice chips, chopped walnuts, mini m and ms and that secret ingredient used in my chewy caramel delight cookies. The recipes are all gluten free and generally all dairy free with the exception of milk within a few chocolate addins.
