Lemon Mousse Ingredients
2 cans or boxes (approx. 14 oz each) sweetened condensed milk
160g fresh lemon juice
400g table cream (creme de leite) or heavy cream
120g milk powder
250g white chocolate, melted
Fresh lemon zest (to taste)
Center Filling & Ganache Topping
Your favorite thick chocolate or hazelnut filling (for the center layer)
300g semi-sweet or milk chocolate (for the ganache)
200g table cream or heavy cream (for the ganache)
Extra lemon zest for garnish
Step-by-Step Instructions
Blend the Mousse: In a high-powered blender, combine the sweetened condensed milk, fresh lemon juice, 400g of cream, milk powder, and melted white chocolate. Blend until the mixture is completely smooth and thickened.
Add the Zest: Remove the blender pitcher from the base and gently fold in the fresh lemon zest using a spatula.
Assemble the First Layer: Line a deep, round cake pan or dish entirely with plastic wrap (this ensures easy unmolding later). Pour exactly half of your lemon mousse into the bottom of the pan.
Add the Chocolate Center: Pipe or carefully spoon your thick chocolate filling over the first layer of mousse.
Top and Chill: Pour the remaining half of the lemon mousse over the chocolate center. Cover the top tightly with plastic wrap and refrigerate for at least 3 hours until completely firm.
Make the Ganache: Melt the 300g of chocolate and stir in the 200g of cream until you have a smooth, glossy ganache.
Decorate and Serve: Remove the firm mousse cake from the fridge, unwrap the top, and invert it onto a serving plate. Remove the rest of the plastic wrap. Pour the warm ganache over the top, using a spatula to push it slightly over the edges. Finish with a final sprinkle of fresh lemon zest, slice, and serve.
