Carnivore Creamy Spinach Artichoke Chicken Bake for an Easy Weeknight Dinner
Note: Traditional spinach and artichokes are not part of a strict carnivore diet. This recipe is best described as a high-protein, low-carb chicken bake with a creamy spinach-artichoke flavor profile.
Ingredients
4 boneless, skinless chicken breasts
8 oz (225 g) cream cheese, softened
½ cup sour cream
½ cup mayonnaise
1 cup mozzarella cheese, shredded
½ cup Parmesan cheese, grated
1 cup spinach, finely chopped
1 cup artichoke hearts, drained and chopped
2 cloves garlic, minced
1 tsp sea salt
½ tsp black pepper
½ tsp onion powder (optional)
Instructions
1. Prepare the Oven
Preheat oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish.
2. Make the Creamy Topping
In a large bowl, combine cream cheese, sour cream, mayonnaise, mozzarella, and Parmesan.
Stir in spinach, artichokes, garlic, salt, pepper, and onion powder until well mixed.
3. Assemble
Arrange chicken breasts in the baking dish.
Spread the creamy spinach-artichoke mixture evenly over the chicken.
4. Bake
Bake for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
For a golden top, broil for 2–3 minutes at the end of cooking.
5. Serve
Let rest for 5 minutes before serving.
Spoon extra creamy sauce over each portion.
