Our final video before summer break! We're making an eye-catching SEAFOOD TOWER!
With lobster, oysters, clams and a few other specialties this is the ultimate impressive presentation as well as a nice way to celebrate summer.

We'll learn about each of the different seafoods and sauces to go with them. Each dish can of course be served individually as well!

The countdown to summer begins! Two more weeks of LIVESTREAMS left for the season and we're going FULL SUMMER with everyone's favorite picnic foods - FRIED CHICKEN and POTATO SALAD

We'll talk about brining, breading and frying the perfect fried chicken and make a potato salad to go along with it!

Ingredients and equipment lists below:

Fried chicken
We're making a buttermilk and pickle brine. Let the chicken brine for a few hours to overnight.
- buttermilk
- pickle brining liquid
- all purpose flour
- rice four (optional)
- garlic powder
- paprika
- salt and pepper
- neutral oil for frying

Potato salad
- yukon gold or red bliss baby potatoes
- celery
- onion
- apple cider vinegar
- dijon mustard
- garlic powder
- mayonnaise
- chives, parsley or other herbs of your choice
- cooked bacon (optional)
- salt and pepper

So damn proud of Ridgewood for standing up for equality and gay rights, so proud to be a mom to these two beautiful kids who are true to themselves and stand up for others. It’s a gorgeous day and I’m happy I got to be a part of it.

We're brining in summer for our last three livestreams of the season starting TONIGHT Tuesday, June 1, 7 PM EST

Tonight we're making STUFFED CLAMS or (Rhode Island STUFFIES)

A quintessential summer dish, stuffed clams are delicious, easy to makes and bring in the flavors of a beach vacation! Serve with a cup our New England Clam Chowder (week 21) and you have a delicious summer meal!

Ingredients and Equipment below:

Ingredients:
- 8 quahogs (or other large clams), can do this with 12 medium sized clams if you can't find quahogs
- 3 tablespoons butter
- 1 onion
- 1/2 green bell pepper
- 2 cloves garlic
- 8 ounces chorizo, or other dry, spicy sausage
- 1 1/2 cups fresh breadcrumbs
- 2 T parmesan cheese

Lemon wedges and hot sauce to serve

COOK WITH ME LIVE (all Q&A welcome) Tuesdays at 7 PM EST on Facebook Live!

Tonight we're going back to desserts with a no-cook classic, perfect for Summer gatherings! TIRAMISU!!!

With only a little bit of time over the stove top, this make ahead Italian dish is perfect for easy entertaining and will wow your guests and friends.

Make one with me and plan to enjoy it the next day after it chills overnight!

INGREDIENTS AND EQUIPMENT BELOW

To cook along
- 1 1/2 cups espresso (or strong coffee), room temperature
- 6 Tbsp rum divided
- 30-40 ladyfingers
- 6 egg yolks
- 3/4 cup granulated sugar divided
- 1/2 c mascarpone cheese
- 1-1/2 cups heavy whipping cream cold
- 2-3 Tbsp unsweetened cocoa powder

Equipment*
We will whip the eggs over a Bain Marie like we've done for few other recipes. You'll need a pot of boiling water a glass or metal bowl and a whisk. Here are the ones I use:

LIVESTREAM COOKING with me Tuesdays at 7 PM EST n FB Live. All questions, comments and live chat welcome!

THIS WEEK I'm revisiting my backpacking days when I first discovered the delicious food of Strasbourg, France, specifically the delicious TARTE FLAMBÉE.

These beautiful savory tarts fed us as students and I quickly fell in love with them: thin crispy crust, tangy creme fraiche topping, and savory onions and bacon. Truly delicious.

Join me as we make a crust and assemble and bake a few tarts together. All comments, questions, input, requests, etc are welcome!

Also, keep an eye out for the livestream schedule for the rest of the school year before we go on hiatus for the summer!

INGREDIENTS and EQUIPMENT BELOW:

To cook along you will need the following

For the crust:
2 c all purpose flour
2/3 c water
1 tsp salt
3 tbsp vegetable oil
A small hint: this is also great on rolled out puff pastry!

For the topping:
1 medium yellow or Spanish onion
4 strips thick cut smoked bacon
1/2 c creme fraiche (can substitute sour cream if you can't find it)
8 oz gruyere
egg yolk, optional
thinly sliced mushrooms, optional (like the one in this pic from my travels)
salt, pepper, nutmeg

EQUIPMENT
You can make this easily with what you have at home. For an extra crispy crust a pizza stone is a great tool to have. This is the one I have:

This week we're putting together a true American retro favorite - CHICKEN KIEV. Named after the Ukrainian city, this dish became ultra fashionable in America in the 1960s and 70s. With a garlicky butter center and a crunch outer crust we can see why!

The recipe will give us a chance to talk about a few key kitchen techniques:
- Making compound butter
- Pounding chicken with the meat pounder
- Dredging with flour, eggs and breadcrumbs

While not complicated, there will be a few time jumps to let ingredients rest.

Ingredients and equipment list below:

Ingredients:
- 1 stick of butter
- garlic
- parsley
- salt
- 4 Chicken breasts
- salt and pepper
- flour
- eggs
- panko bread crumbs
- pinch of cayenne
- vegetable oil for frying

This week we're making another French cafe favorite!
STEAK TARTARE

A delicious celebratory meal. We'll learn the tricks to make this classic at home!

Ingredients:
- Beef tenderloin (not ground)
- Dijon mustard
- Capers
- Shallots
- Wosterschire sauce
- Red wine vinegar
- salt and pepper to taste
- 1 egg yolk

We'll garnish with some chives and serve this with a side salad, a parmesan crisp and some nice buttered toast.

Salad dressing:
We'll add some sweetness to a classic vinaigrette like we made last week.

- Dijon mustard
- lemon juice
- honey
- salt and pepper
- egg yolk
- olive oil

EQUIPMENT
All you need to make a steak tartare is a sharp knife. I'm adding a link below for one of my favorite kitchen tools- a round cookie cutter or mold to present things in a fancy-schmancy way!

Hello my cooking friends! On this week's FB LIvestream (Tuesday 7 PM EST) we're making a classic and casual French dish - A Croque Madame!

The French cousin to the American grilled cheese sandwich, a Croque Madame is great for breakfast, lunch or dinner and for adults and kids alike.

We'll serve it up with a French side salad and enjoy!

INGREDIENTS and EQUIPMENT list below

For the sandwich
- soft white sandwich bread, preferably thick sliced
- butter
- dijon mustard
- sliced ham
- sliced gruyere cheese

For the béchamel
- flour
- milk
- nutmeg

To finish
- one egg per person

For the salad
- crisp lettuce like frisbee, bib, butter, etc
- dijon mustard
- lemon juice
- egg yolk (optional)
- red wine vinegar
- olive oil
- salt and pepper
