Lemon Basil Chickpea Quinoa Salad 🍋🌿
Fresh, vibrant, and packed with Mediterranean flavor — this quinoa salad is perfect for meal prep, easy lunches, summer gatherings, or a healthy side dish that actually keeps you full.
Ingredients
1 batch quinoa, cooked according to package directions and cooled
1 English cucumber, chopped
1/2 red onion, chopped
1/2 jar roasted red peppers, chopped
1 jar sun-dried tomatoes, drained and chopped
Kalamata olives, sliced
2 cans chickpeas, rinsed and drained
Crumbled feta cheese
Fresh basil, chopped
Dressing
1/3 cup Olivelle Garlic & Herb Olive Oil
1/2 cup Olivelle Meyer Lemon Balsamic Vinegar
Olivelle Feta & Herb Dipper Seasoning, to taste
Olivelle Rosemary Sea Salt, to taste
Olivelle Rainbow Pepper, to taste
Directions
Cook quinoa according to package directions and let cool completely.
Add cucumber, red onion, roasted red peppers, sun-dried tomatoes, olives, chickpeas, feta, and basil to a large bowl.
Whisk together dressing ingredients in a small bowl or jar.
Pour over salad and toss until evenly coated.
Chill before serving for the best flavor.
