Have you ever tasted a dessert that captures the essence of summertime?

Mini Mango Cheesecakes are the perfect blend of creamy, tangy, and sweet, making them a delightful treat for any occasion. The luscious mango puree and velvety cream cheese create a flavor explosion that will leave you wanting more!

_____Ingredients:_____

- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1 tablespoon sugar
- 12 oz cream cheese, softened
- 1/2 cup sugar
- 1/4 cup sour cream
- 1 tsp vanilla extract
- 1 cup ripe mango puree (fresh or canned)
- 2 eggs

_____Directions:_____

1. Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
2. In a medium bowl, mix together the graham cracker crumbs, melted butter, and 1 tablespoon of sugar until well combined.
3. Press about 1 tablespoon of the crumb mixture into the bottom of each muffin liner to form the base of your cheesecakes.
4. In a large mixing bowl, beat the softened cream cheese with 1/2 cup sugar until smooth and creamy.
5. Add the sour cream, vanilla extract, and mango puree, mixing until well combined.
6. Add the eggs, one at a time, mixing on low speed until just combined.
7. Pour the cheesecake batter evenly over the graham cracker crusts in the muffin tin.
8. Bake for 20-25 minutes or until the centers are set but still slightly jiggly.
9. Remove from the oven and let cool in the tin before transferring to the refrigerator to chill for at least 2 hours.
10. Serve chilled, garnished with fresh mango slices or whipped cream if desired.

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1/2 cup chopped walnuts (optional)
- 1 teaspoon vanilla extract

*For the Cream Cheese Frosting:*

- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt

_____Directions:_____

1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
3. In another bowl, combine the vegetable oil, eggs, grated carrots, crushed pineapple, and vanilla. Mix until well blended.
4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the walnuts, if using.
5. Divide the batter evenly between the prepared pans and smooth the tops.
6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup cold butter, cubed
- 3/4 cup milk
- 1 pound breakfast sausage
- 1/4 cup all-purpose flour (for gravy)
- 2 cups milk (for gravy)
- Salt and pepper to taste
- Optional: chopped parsley for garnish

1. Preheat the oven to 425°F (220°C).
2. In a large bowl, whisk together the flour, baking powder, and salt.
3. Cut in the cold butter until the mixture resembles coarse crumbs.
