Thank you & team for an excellent meal. I have been wanting to stop in Staunton for a long time to eat some delicious food. I was on the road last week, and decided to take the scenic route home. Some might not want to sit alone for a long format tasting menu, but I was there for the experience, and everyone made me feel at home. I recently had the pleasure of teaching another culinary class at and one of the approachable and delicious dishes I showcased was these Curry Roasted Carrots.

As a private chef I cook a wide variety of things for my clients, but often it's the vegetable dishes that really blow peoples' minds 🤯 and give them a whole new appreciation for the ingredients. Give them a try and let me know what you think!

Curry Roasted Carrots Recipe 🥕
Ingredients:
1-2 lbs whole carrots
2 Tbsp brown sugar
1 Tbsp Salt
1 Tbsp Curry powder (I prefer madras curry)
2 tsp Smoked paprika
1-2 Tbsp neutral oil

½ cup yogurt (I prefer thick yogurt)
Fresh Mint & Dill 🌿 for topping (picked from stems)

Method:
-Rinse your carrots thoroughly, no need to peel them (especially if they are fresh from the farm)

-Mix together sugar, salt, curry powder and smoked paprika

-Lay carrots out on a parchment covered sheet pan, or jelly roll pan

-Coat the carrots in your oil, then rub spice mixture onto the carrots

I will often let these carrots cure in this mixture for several hours, so the first few steps can be done well ahead of time, and the end result will be an even tastier carrot!

-Preheat oven to 375F

-Roast carrots at 375F for 30-45 minutes, turning them at about 15 minutes.

-I prefer the carrots to have a bit of tooth to them, but you can cook them a bit longer to soften them if desired.

-Use a large spoon to distribute the yogurt around a large plate.

Place the carrots on top of the yogurt
-top the whole dish with lots of fresh mint and dill (I like to add za’atar for a bit of extra flavor and visual effect)

Another Derby in the books! Thank you as always to the committee for continuing to put this amazing tournament together. It was tough fishing from shore this year, but it brought everyone together, and leveled the playing field in unexpected ways. I am always grateful to get outside and fish. This year I was fortunate enough to come home with some prizes, and some epic memories. To all those I fished with this year, it was a genuine pleasure spending time. To thank you for allowing me the space to fish this tournament like a crazy person. I know it’s not easy being a derby widow, and I appreciate everything you do yo support my pursuits.
