Earlier this week I felt like trying something new and different. When I first started I kept hearing about but I didnāt get it, whatās it for, why is everyone talking about it, etc?!
So I took my favorite sourdough recipe and decided to just wing it! Hereās what I did šš»
8pm mixed starter
8 am mixed my favorite sourdough bread recipe and left it to rise
After bulk fermentation (about 3 pm) I sprayed a 9x13 baking dish with avocado oil, placed the dough in the pan, covered it with foil and let it rest for an hour.
At 4 pm I added roasted garlic to the dough, chopped pepperoni, a light sprinkle of shredded cheese, and a light layer of pizza sauce.
This layer should be light to prevent it from getting soggy and not baking through.
With damp fingertips, take the top of the dough and fold it halfway down, then repeat with the bottom of the dough.
Ensure you press the dough together at the seam so it sticks. Gently dimple the dough, this will help the dough fit better in the pan and gives those beautiful bubbles that focaccia is known for.
Add remaining toppings :
Pizza sauce
more chopped pepperoni (chopped into 4ths so it was one bite and would fit in dimples)
As much cheese as your heart desires
Dimple gently and add more ingredients if you feel like it needs more.
Cover and let rest another hour or two.
My dough was resting on the stove that was pretty warm so at 5:30pm I preheated the oven to 425 F
Bake uncovered for 25 minutes or until the sides and top are golden brown
Let rest in pan 5 minutes and then remove, place on wood cutting board or wire rack and slice with a serrated bread knife and enjoy!
This was SO delicious, I have never seen a loaf of bread eaten so quickly haha. I have made pizza multiple different ways, but this⦠was probably my favorite.
Sauce, cheese, and pepperoni through each bite , crusty edges that are so soft, light and fluffy.
Add your favorite sauce and toppings and enjoy with your family! I 100% understand why Focaccia bread is so popular!
