I finally ate late last night because I needed to eat. I had made my dinner throughout my day, but didn't feel like eating when it was completely finished. It's something I do quite often. It truly wasn't anything too special, but Bella and Max enjoyed it, too. It was just a colby jack cheeseburger with shredded lettuce, chopped white onions and roma tomatoes, dill pickles, mayo, and thousand island dressing on a wheat bun, baked beans and homemade potato salad with a microwaved russet potato, two boiled eggs, chopped white onions, chopped dill pickles, chopped English cucumber, garlic salt, pepper, mayo and spicy mustard. I hope that each of you enjoyed your Memorial Day, and truly remembered why we each get to celebrate it. 🌹🪖🪽🪦🪽🪖🌹

I also want to give Heavenly Father a quick shout out for protecting my family, friends, and all those who had their weekend plans detoured by a nasty chemical leak in The OC that could have been devastating all around. As you slowly head back home, please pause for a moment and send a thank you blessing up to whomever you worship. A1 Shrimp Chaos:

🛒 Ingredients:
• 1 lb cooked shrimp, peeled, deveined, chopped
• 1/2 cup cucumber, diced
• 1/2 cup cherry tomatoes, chopped
• 1/3 cup red onion, finely diced
• 1 jalapeño, finely diced
• 1/4 cup dill pickles, finely chopped
• 1/4 cup fresh cilantro, chopped
• 1 avocado, diced, optional
• 2 tablespoons fresh lime juice
• 1 tablespoon lemon juice
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper

For the creamy A1 chaos sauce
• 4 oz cream cheese, softened
• 1/3 cup sour cream
• 1/4 cup mayonnaise
• 3 tablespoons A1 steak sauce
• 1 tablespoon pickle juice
• 1 tablespoon lime juice
• 1 tablespoon hot honey
• 1 teaspoon Worcestershire sauce
• 1/2 teaspoon smoked paprika
• 1/2 teaspoon garlic powder
• 1/4 teaspoon cayenne pepper, optional
• 1 tablespoon finely minced jalapeño

👩‍🍳 Directions:
1️⃣ Make the chaos sauce: In a bowl, whisk cream cheese, sour cream, mayonnaise, A1 steak sauce, pickle juice, lime juice, hot honey, Worcestershire sauce, smoked paprika, garlic powder, cayenne pepper, and minced jalapeño until creamy and smooth.
2️⃣ Season the shrimp: In a large bowl, add chopped shrimp, lime juice, lemon juice, salt, and black pepper. Toss and let sit for 5 minutes.
3️⃣ Add the crunch: Add cucumber, cherry tomatoes, red onion, jalapeño, pickles, cilantro, and avocado if using.
4️⃣ Mix with sauce: Spoon in the creamy A1 chaos sauce and gently toss until everything is coated.
5️⃣ Build the jar: Pack the shrimp mixture into a large clear glass jar. Add extra jalapeño slices, cilantro, and a drizzle of A1 on top.
6️⃣ Chill: Refrigerate for 20–30 minutes before serving so the flavors meld and look bold and messy.

Hot Honey Cream Cheese Dip:

🛒 Ingredients:
Cream cheese base
• 2 blocks cream cheese, softened
• 1/2 cup sour cream
• 1/2 cup shredded mozzarella
• 1/4 cup grated parmesan
• 1 tablespoon olive oil
• 1 teaspoon garlic powder
• 1/2 teaspoon onion powder
• 1/2 teaspoon smoked paprika
• 1/4 teaspoon chili flakes
• 1/4 teaspoon black pepper
• Pinch of salt
Hot honey topping
• 1/3 cup honey
• 1 tablespoon hot sauce
• 1 teaspoon chili flakes
• 1 teaspoon lemon juice or lime juice
• 1 tablespoon butter
Garnish
• Fresh parsley or chives, chopped
• Extra smoked paprika
• Extra chili flakes
• Crushed red pepper, optional
For serving
• Pretzels
• Tortilla chips
• Toasted baguette slices
• Crackers
• Pita chips

👩‍🍳 Directions:
1️⃣ Make the cream cheese base
Preheat oven to 375°F / 190°C.
In a bowl, mix softened cream cheese, sour cream, mozzarella, parmesan, olive oil, garlic powder, onion powder, smoked paprika, chili flakes, black pepper, and salt.
Mix until creamy and smooth.

2️⃣ Spread into a dish
Spoon the mixture into a small baking dish.
Use the back of a spoon to create little waves and dips on top. This helps the honey sit beautifully on the surface.
Sprinkle a little extra smoked paprika on top.

3️⃣ Bake
Bake for 15–18 minutes, until the dip is hot, creamy, and lightly golden around the edges.
For a more browned top, broil for 1–2 minutes at the end, but watch it carefully.

4️⃣ Make the hot honey
While the dip bakes, add honey, hot sauce, chili flakes, lemon juice, and butter to a small saucepan.
Warm over low heat for 2–3 minutes, just until smooth and glossy.
Do not boil it hard.

5️⃣ Finish the dip
Remove the cream cheese dip from the oven.
Pour the warm hot honey over the top.
Garnish with parsley, extra chili flakes, and a light dusting of smoked paprika.
Serve immediately while warm and creamy.

KENTUCKY DERBY CROCKPOT BOURBON MEATBALLS

Ingredients:

2 pounds frozen meatballs approximately 3-12 oz. bags
2 cups ketchup
½ cup honey
2 tablespoons Worcestershire sauce
2 tablespoons apple cider vinegar
¾ cup bourbon
½ teaspoon red pepper flakes
2-3 minced garlic cloves

Instructions:

In a medium mixing bowl, combine the ketchup, honey, Worcestershire sauce, apple cider vinegar, bourbon, red pepper flakes, and garlic. Whisk together until smooth.
Dump two pounds of store-bought frozen meatballs into a slow cooker.

Pour the BBQ sauce over your meatballs and give everything in the crockpot a gentle stir to coat evenly.

Cook your meatballs on low for 4-5 hours or 3-4 hours on high if you're short on time.
