Healthy Pumpkin Muffins Recipe

Ingredients

1 cup pumpkin puree
1 cup whole wheat flour
1/2 cup rolled oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
2 large eggs
1/3 cup pure maple syrup
1/3 cup plain Greek yogurt
1 teaspoon vanilla extract
1/4 cup canola oil
Optional 1/3 cup chopped walnuts or raisins

Instructions

Preheat your oven to 375 Fahrenheit. Lightly grease a muffin tin or line it with paper liners if you prefer.

In a large bowl combine the whole wheat flour rolled oats baking powder baking soda ground cinnamon ground ginger ground nutmeg and salt.

In a separate bowl whisk together the eggs pumpkin puree maple syrup Greek yogurt vanilla extract and canola oil until the mixture is smooth and well blended.

Slowly add the dry ingredients into the wet ingredients stirring gently until just combined. Do not overmix the batter to ensure the muffins remain light and tender. If you are using walnuts or raisins fold them in at this time.

Ingredients for the Cheesecake Cookie Dough Filling

8 ounces cream cheese softened
1 quarter cup sour cream
1 third cup powdered sugar
1 half teaspoon vanilla extract
1 tablespoon lemon juice
1 half cup edible cookie dough chunks

Recipe Instructions

Begin by preparing the cookie dough taco shells. In a medium bowl combine the softened butter and granulated sugar and beat them until the mixture is smooth and well blended. Add in the egg and vanilla extract and mix well. In a separate bowl whisk together the all purpose flour baking soda and salt. Slowly incorporate the dry ingredients into the wet ingredients stirring until a smooth dough forms. Divide the dough into approximately 10 equal portions and shape each portion into a small ball. On a lightly floured surface press each ball into a flat circle about 4 inches in diameter.

Place the flattened dough rounds on a baking sheet that has been lined with parchment paper. Preheat your oven to 350 degrees Fahrenheit.
