Masoor Daal
2 cups masoor daal (split red lentils)
6 cups hot water
Neutral oil
1 onion diced
2 tablespoons garlic paste
2 tablespoons ginger paste
3 tomatoes diced
2-3 green chilies diced
Spices:
1 tablespoon Daal masala (substitute with 2 teaspoons turmeric and add an extra 1/2 tablespoon of garam masala)
1 tablespoon garam masala
1 tablespoon coriander powder
1/2 tablespoon cumin powder
1 tablespoon Kashmiri red chili powder
2 tsp salt or to taste
Chopped cilantro or kasoori methi and squeeze of lemon to finish

Beef Pulao
2.2lbs (1 kg) beef cut into cubes
4 cups sela basmati rice washed thoroughly and drained
7 cups water
1/2 cup vegetable oil
1 large onion sliced
2 tablespoons ginger garlic paste
3 green chilies
2.5 tsp salt
1/2 tsp red chili powder (optional)

3 tablespoons Pulao Masala or Alternative spices:
Coriander powder 2 tbsp
Cumin powder 1 tbsp
Black pepper 1½ tsp
Fennel powder 1½ tsp
Ginger powder 1 tsp
Garlic powder 1 tsp
Turmeric powder ¾ tsp
Cinnamon powder ½ tsp
Clove powder ¼ tsp
Cardamom powder ¼ tsp
Nutmeg powder ⅛ tsp

You can also use 1 pulao masala packet, but do not add any extra salt

Spicy Keema Pasta
Sauce makes enough for 2 batches, so you can freeze half for next time or you can make a double batch and use 2 boxes of pasta. Or you can cut the recipe in half:

1.5 lbs of ground beef
1 large onion chopped
1 tablespoon garlic crushed or paste
1 tablespoon ginger paste
2 heaping tablespoons Keema Masala or alternative spices: (1 tablespoon coriander, 1/2 tablespoon cumin, 1 tablespoon garam masala, 1/2 tsp turmeric, 1 tsp black pepper)
1 tsp Kashmiri red chili or cayenne pepper
1 tsp salt
Red pepper flakes to taste (optional)
1 heaping tablespoon tomato paste
1/2 cup chicken or beef broth or 1 bouillon cube dissolved in water
1/4 cup heavy cream
1 32 oz jar marinara sauce
4 oz cheese shredded
Parsley or cilantro for garnish

1 box of pasta if saving half of the sauce for later or 2 boxes if you’re using all the sauce

Easiest Butter Chicken
1.5 - 2 lbs chicken breast cut into small cubes
Oil and butter
4 tablespoons Butter Chicken Masala or alternative spices:
2 tbsp coriander powder
2 tsp cumin powder
1 tsp turmeric
1.5 tsp garam masala
1.5 tsp ginger powder
1.5 tsp garlic powder
1.5 tsp black pepper
1 tsp cinnamon powder
0.5 tsp ground cloves
0.5 tsp ground cardamom
0.25 tsp nutmeg

1 tsp salt
2 tsp Kashmiri red chili powder or to taste
1/2 can (3 tablespoons) tomato paste
1-1.5 cups heavy cream
Cilantro to garnish
Squeeze of lemon

Chicken Korma
2.2 lbs chicken (I used breast but you can use whole chicken cut up)
1 large onion sliced, fried, and blended with 1.5 cup plain whole milk yogurt
1-2 to 1 cup neutral oil
3 tablespoons ginger garlic paste
1.5 tsp salt
2 tsp Kashmiri red chili
1/2 tsp hot red chili
1/2 tsp garam masala

3 tablespoons Korma masala or alternative spices:
2 tbsp coriander powder
2 tsp cumin powder
1 tsp turmeric
1.5 tsp black pepper
2 tsp ginger powder
1.5 tsp garlic powder
1.5 tsp ground cardamom
1 tsp cinnamon powder
0.5 tsp ground cloves
0.25 tsp nutmeg
0.5 tsp garam masala

Handful chopped cilantro for garnish

Chicken Biryani
2.2 pounds (1 kg) chicken breast or whole chicken cut up - your preference
4 cups sela basmati rice washed and drained
Neutral oil
1-2 large onions sliced
3 heaping tablespoons ginger garlic paste
3-4 tomatoes chopped
3-4 green chilies
4 tablespoons biryani masala, I used my own or:

Alternative spices
1 biryani masala packet, but do not add extra salt and chili or
1.5 tbsp coriander powder
1 tbsp cumin powder
1.5 tsp turmeric
1.5 tbsp black pepper
1.5 tbsp ginger powder
1 tbsp garlic powder
1.5 tsp cinnamon powder
1 tsp ground cloves
1.5 tsp ground cardamom
0.5 tsp nutmeg
0.5 tsp mace (optional)
1.5 tbsp garam masala

2.5 tsp salt
1 tablespoon Kashmiri red chili
1 tsp hot red chili powder
1 cup plain whole milk yogurt whisked and brought to room temp
Water as needed
Chopped cilantro
1/2 tsp food coloring powder, I like orange, dissolved in 1 cup water

Instant Pot Masoor Daal
2 cups masoor dal (split red lentils) washed and drained

1.5 tsp salt
Chopped cilantro for garnish at the end

Pressure cook times, HIGH pressure, natural release 10 min:
Textured daal - 7 min
Softer daal - 9 min

Butter Chicken Meatballs
For the chicken mixture:
1.5 lbs ground chicken
1 egg
1/2 cup breadcrumbs
1 handful chopped cilantro
2 tablespoons Butter Chicken Masala
1 tsp red chili powder (optional for heat)
Salt to taste, I added 1 tsp
1 8oz block mozzarella cut into small cubes

For the butter sauce:
1/2 of one onion chopped
Neutral oil
2 tablespoons ginger garlic paste
4 tablespoons tomato paste
1.5 cups heavy cream
2 tablespoons Fadwa Masala Butter Chicken Masala or

Alternative spices:
1 tablespoon garam masala, 1/2 tablespoon coriander powder, 2 tsp cumin powder, 1 tsp turmeric, 1 tsp black pepper

1/2 - 1 tsp red chili powder (optional for heat)
Salt to taste, I added 1 tsp
