People often ask, “Why go through the trouble?” I simply say, “If not you, who? If not now, when?” Never.

Cooking needs to be thoughtful. Yes, spontaneous moments happen, but more often than not, you have to try first, fail, work on it, and move on.

I am lucky that I am surrounded by people who have the same core mentality, and that is what you should look for in a team to develop yourself as a great professional and, even more importantly, as a better human being.

A whimsical journey from the bakery, to the oven, to the table. Making Barbari bread alongside my colleagues was an extraordinary experience and an important step in strengthening what we can achieve as a team.

Barbari bread is a traditional Persian bread with roots in Iran, known for its elongated shape, distinct ridges, and crisp crust. Reimagining it as a whole-wheat 🌾 loaf challenged us to honor its heritage while exploring new possibilities.

As far as we know, this whole-wheat Barbari bread is one of the first examples of its kind, and a testament to what can happen when curiosity, craftsmanship, and teamwork come together.

This is it.

Coming to a place that had always been a dream of mine is an understatement of what I later found at Blue Hill Farm & Stone Barns Center

I arrived as a regular person, amazed by the beauty and magnitude of this place. But the best part of all was the people. It is hard to explain how grateful I am to have found them.

I learned and grew so much, both professionally and personally, in ways that are truly invaluable. Leaving this legendary place as one of its Senior Sous Chefs (while still being the same regular person) has guaranteed me one thing:

The possibilities are endless if you never stop trying and never stop chasing what you want.

There are so many people to thank that it would be impossible to name everyone. To everyone who was part of this journey, thank you.
