Whole Smoked Veal Hindquarter (Glossy Finish)
🥩 Cut
1 whole veal hindquarter (with hip bone), 5–7 kg
Dry Rub
3 tbsp kosher salt
2 tbsp sweet paprika
1½ tbsp black pepper
1 tbsp garlic powder
1 tsp ground cumin
Mix well. No oil at this stage.
Smoking Wood
Apple wood or cherry wood (soaked 30–45 minutes)
Spritz (Moisture Control)
1 liter water
2 tbsp apple cider vinegar
Glossy Glaze (Applied at the End)
4 tbsp honey
3 tbsp mild BBQ sauce
2 tbsp butter
1 tsp apple cider vinegar
🔥 Method (Low & Slow – No Burning)
1️⃣ Seasoning
Rub the veal hindquarter evenly with the dry rub.
Cover and refrigerate 12 hours (overnight recommended).
2️⃣ Smoking
Preheat smoker or grill to 90–100°C (195–210°F)
Use indirect heat only
Add soaked apple/cherry wood for light smoke
⏱️ Smoke for 4–5 hours
🔁 Spritz every 45 minutes with the water/vinegar mix
Smoke should be thin and clean, never heavy.
3️⃣ Wrapping (Key Step)
Wrap tightly in parchment paper, then foil.
Return to smoker for 3–4 more hours
🎯 Target internal temperature:
68–70°C (155–158°F)
→ Juicy, tender, not falling apart.
4️⃣ Glossy Finish ✨
Melt butter, honey, BBQ sauce, and vinegar together.
Unwrap the meat and brush generously.
Return to smoker for 10–15 minutes only
❌ Do not increase temperature
❌ Do not let it caramelize too hard
5️⃣ Resting
Remove from heat.
Tent loosely with foil and rest 30–40 minutes

🍜 Spicy Mexican Birria Ramen (Full Recipe)
Ingredients
For the Birria
1 kg beef (chuck or shank, cut into large pieces)
2 tbsp vegetable oil
3 dried guajillo chilies
2 dried ancho chilies
1 dried chile de árbol (optional, for heat)
1 medium onion
4 garlic cloves
1 tsp ground cumin
1 tsp dried oregano
1 tsp paprika
½ tsp cinnamon
1 tsp salt (or to taste)
½ tsp black pepper
2 tbsp tomato paste
3 cups beef broth
1 tbsp apple cider vinegar or lime juice
For the Ramen
2 packs instant ramen noodles (discard seasoning packets)
1–2 cups birria broth (adjust for soupiness)
Toppings
Chopped fresh cilantro
Finely diced white onion
Lime wedges
Chili oil (optional)
Instructions
1) Prepare the Chili Sauce
Remove stems and seeds from dried chilies.
Toast chilies lightly in a pan (10–15 seconds per side).
Soak in hot water for 15 minutes until soft.
Blend soaked chilies with onion, garlic, cumin, oregano, paprika, cinnamon, tomato paste, vinegar, and 1 cup beef broth until smooth.
2) Cook the Birria
Heat oil in a large pot over medium-high heat.
Sear beef pieces until browned on all sides.
Pour in the blended chili sauce and remaining broth.
Season with salt and pepper.
Cover and simmer on low for 2–2½ hours until meat is very tender.
Shred the beef and return it to the broth.
3) Make the Ramen
Bring birria broth to a gentle boil.
Add ramen noodles and cook 2–3 minutes until tender.
Add shredded beef and simmer 1 more minute.
4) Serve
Ladle into bowls.
Top with chopped onion, cilantro, a squeeze of lime, and chili oil if desired.

For extra flavor like the photo:
Skim some fat from the birria and drizzle it on top before serving.

Ingredients
Graham Cracker Crust
2 cups graham cracker crumbs
1/3 cup granulated sugar
1/2 cup unsalted butter, melted
Lemon Cheesecake Filling
24 oz (680 g) cream cheese, softened (3 blocks)
1 cup granulated sugar
1 cup sour cream (room temperature)
3 large eggs (room temperature)
1/4 cup fresh lemon juice
1 tablespoon lemon zest
1 teaspoon lemon extract
1 teaspoon vanilla extract
1 tablespoon all-purpose flour
Optional Toppings
Whipped cream
Fresh lemon slices
Lemon curd
Blueberry jam or fresh blueberries
Instructions
1. Prepare the Crust
Preheat oven to 325°F (160°C).
Mix graham cracker crumbs and sugar in a bowl.
Add melted butter and stir until evenly moistened.
Press firmly into the bottom of a 9-inch springform pan.
Bake for 10 minutes, then let cool.
2. Make the Lemon Cheesecake Filling
Beat cream cheese until smooth and creamy.
