Baked Feta with Olives & Sun-Dried Tomatoes
Ingredients:
8-ounce block feta cheese
1 cup pitted olives, drained
½ cup sun-dried tomatoes
⅓ cup olive oil
3 cloves garlic, thinly sliced
½ teaspoon dried oregano
½ teaspoon dried thyme
½ teaspoon dried rosemary
Kosher salt
Fresh cracked pepper
Fresh chopped parsley, for garnish
Sliced French bread or crostini, for serving
Instructions:
Preheat the Oven: Heat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
Prepare the Dish: Place the feta block in a small baking dish. Surround it with olives and sun-dried tomatoes.
Mix the Seasonings: In a small bowl, combine olive oil, sliced garlic, oregano, thyme, rosemary, salt, and pepper.

Spicy Jalapeño Popper Soup 🌶️🧀
Ingredients:
4 jalapeños, diced
1 onion, chopped
2 cloves garlic, minced
6 cups chicken broth
1 lb chicken breast, cooked and shredded
8 oz cream cheese, softened
1 cup heavy cream
1 tsp salt
1/2 tsp pepper
1/2 tsp dried oregano
1 cup cheddar cheese, shredded
1/4 cup bacon, cooked and crumbled
Fresh cilantro, for garnish
Directions:
In a large pot, sauté the jalapeños, onion, and garlic in a bit of oil over medium heat until softened.
Add the chicken broth and bring to a boil.
Reduce heat, and add the cooked chicken, cream cheese, heavy cream, salt, pepper, and oregano. Stir until the cream cheese is melted and the soup is heated through.
Before serving, stir in the shredded cheddar cheese until melted.

Ingredients:
8 ounces of cream cheese, softened
4 ounces of sharp cheddar, shredded
½ teaspoon of garlic powder
1 teaspoon of onion flakes
½ teaspoon of salt
7 ounces of pepper jelly
Instructions :
Preheat the oven to 350°F.
In a bowl, mix the softened cream cheese, shredded cheddar, garlic powder, onion flakes, and salt until well combined.
Spread the cheese mixture into an oven-safe dish or pie pan, ensuring it's evenly distributed.

Ingredients:
1 pound Beef chops
1/2 cup balsamic vinegar
2 tablespoons apricot preserves (or honey)
2 teaspoons dijon mustard
2 cloves garlic, minced or grated
1 teaspoon thyme, chopped (optional)
1/2 teaspoon salt
1/2 teaspoon pepper
2 large peaches, sliced
1/4 cup blue cheese (or feta), crumbled (optional)
Directions:
Marinate the Beef chops in half of the mixture of the balsamic vinegar, apricot preserves, mustard, garlic, thyme, salt, and pepper, for 20 minutes to overnight, reserving the remaining half.
Shake off the excess marinade and pan fry over medium-high heat until cooked through, about 3-5 minutes per side, before setting aside.
Place the remaining balsamic mixture in the pan and simmer until it starts to thicken, about 3 minutes.
Add the peach slices and cook until they are just tender, about 2 minutes.
Enjoy the pork chops topped in the balsamic peach sauce topped with the crumbled blue cheese!

1/2 cup (1 stick) unsalted butter
1 cup packed brown sugar
2 tablespoons corn syrup
1 loaf of French bread, sliced into 1-inch thick slices
5 large eggs
1 1/2 cups half-and-half
1 teaspoon vanilla extract
1 teaspoon Grand Marnier or orange liqueur (optional)
1/4 teaspoon salt
Instructions:
Step 1: Prepare the Caramel Base
In a small saucepan, melt the butter over medium heat.
Add the brown sugar and corn syrup, stirring until the sugar dissolves and the mixture is smooth.
Pour the caramel mixture into a 9×13-inch baking dish, spreading it evenly over the bottom.
Step 2: Arrange the Bread
Arrange the slices of French bread in a single layer over the caramel base. You may need to overlap them slightly to fit.

Ingredients:
1 (8 oz) package cream cheese, softened and cubed
4 tablespoons butter
1/3 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (18 oz) bag frozen corn, thawed
1/4 teaspoon cayenne pepper (optional)
1 cup sharp cheddar cheese, grated
Instructions :
Preheat oven to 350°F and grease a 2-quart baking dish.
In a medium pot over low heat, melt cream cheese and butter. Stir in milk until mixture is smooth. Add salt, pepper, corn, and cayenne pepper (if using).

Directions:
Preheat Oven:
Preheat to 350°F (175°C) and grease a baking dish.
Prepare Cheesecake Filling:
In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
Layer Phyllo Dough:
Lay out a sheet of phyllo dough and brush with melted butter.
Repeat, stacking 5-6 sheets with butter in between each layer.
Add Filling:

1 pint cherry tomatoes, sliced in half
1/4 cup vegetable broth
3 tablespoons fresh lemon juice (divided as 1 tbsp for sauce, 2 tbsp for seasoning)
1/2 cup fresh basil, finely chopped
1/2 teaspoon fresh lemon zest
1/2 teaspoon salt (more to taste)
1 teaspoon granulated sugar
1/4 teaspoon fresh ground black pepper (more to taste)
1 and 1/2 pounds fresh cod, cut into 4 fillets
Additional salt and pepper for seasoning
Directions:
For the sauce, heat olive oil in a large sauté pan over medium heat. Add red pepper flakes and garlic, sautéing for 1 minute. Add cherry tomatoes and cook until soft and blistering (9-12 minutes).

Ingredients:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1/2 cup milk
1 large egg
1 teaspoon vanilla extract
1/4 cup cinnamon sugar (for topping)
Directions:
Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
In another bowl, combine the melted butter, milk, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Divide the batter evenly among the muffin cups.
Generously sprinkle the cinnamon sugar over the tops of the muffins.

Cheesesteak Tortellini in Rich Provolone Sauce
Ingredients :
1 package (12 oz) cheese tortellini
1 tablespoon olive oil
1 large onion, sliced
1 pound beef steak, cubed
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup beef broth
2 tablespoons Worcestershire sauce
1 cup shredded provolone cheese
Instructions:
Cook tortellini according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. added onions until is tender.
Increase heat to medium-high, add beef steak to the skillet, and season with salt and pepper. Cook until beef is browned.
Stir in beef broth and Worcestershire sauce, bring to a simmer, and cook for 5 minutes.
Reduce heat to low, add cooked tortellini to the skillet, and toss to combine. Sprinkle with provolone cheese and cover until cheese melts.
Serve hot, garnished with additional cheese if desired.

Green Salad with Apples and Blue Cheese
Ingredients
Salad dressing
¼ cup extra virgin olive oil
3 tablespoons Dijon mustard
2 tablespoons honey
1 medium lemon juice freshly squeezed or more, to taste
Salad ingredients
6 oz mixed greens
1 large red apple such as Honey Crisp, Fuji, or Gala, cored and sliced
½ cup pecans chopped
⅓ cup Blue cheese crumbled
US Customary - Metric
Instructions
Make salad dressing
Combine all salad dressing ingredients in a mason jar. Whisk well with a fork, until emulsified. Or, close with the lid, and shake vigorously. Add more lemon juice to taste.
Assembly
I prefer to arrange the salad in individual bowls for presentation purposes.
Add mixed greens to each individual salad bowl. Nestle the remaining salad ingredients (sliced apples, chopped pecans, and blue cheese) on top of the green salad.
Drizzle with the salad dressing.
Alternatively, you can combine all the salad ingredients (except pecans and half of the crumbled blue cheese) in a large serving bowl, add the dressing, and toss to combine. Then, top the salad with chopped pecans and the remaining half of the crumbled blue cheese.
