This right here is one of my favorite dinners to make. Jager-Schnitzel with spatzle.

Between flattening the pork, breading, frying, and mixing the fresh egg noodle dough by hand; it takes about 2 hours to create this.

Obviously I have the first one in the pan tonight. It got a little over cooked on one side.

I don’t have an online recipe source for this one. It comes from a cookbook I bought in Heidelberg Germany over twenty years ago.

Stretch a Buck Ultimate Shepards Pie was his weekends main meal.

This is a Rachel Ray recipe that stretches 1 lb of ground beef. I made it double because we got ground beef for 50% off this week.

If you aren’t a fan of peas, you can use corn instead.

I pretty much followed her recipe substituting out butter with a non-dairy alternative, skipping the onions/garlic, and using coconut aminos + fish sauce for Worcestershire sauce. We have a no lactose, no onions, no soy requirement between my house and my mom’s.

When your kid asks for soft baked pretzels.
You deliver.
This brought back memories of visiting friends after school. We’d bake pretzels 🥨.

It’s weird how pretzel making came back around.

Caffeine free iced tea and meat free flat breads

Iced tea was a choice between 4C instant mix or making it from scratch. I chose from scratch

The flat bread recipe is one that I found a long time ago when I was still a vegetarian (or junkitarian as my step dad called it).

It’s a pita bread topped with goat cheese, feta cheese, roasted peppers, and sliced Kalamata olives. The actual recipe had fried zucchini but I don’t have that right now. I’ve added marinated artichoke hearts to one.

That is steam coming off this pot of semi-homemade Sunday sauce.

A can of crushed tomatoes and a can of sauce. Both Contadina brand.
It started with 7 Preimo sweet Italian sausages, but you know I had to taste test one.

Added seasonings, splash of pasta water, plus rinsed the cans with chicken broth.

After all that it just has to simmer.

What came out was worthy of wiping the plate with a piece of bread.

Not too bad.

Hitting my stride in July.

Today, we had BLTs 🥓🥓for lunch with peppered bacon. I used leftover hamburger buns from 4th of July. Plus the fresh tomato and lettuce I picked up this week.

This evening, we had falafel 🥙 pockets.
Depending on your version it can be made with fava beans or chickpeas.
I typically DO NOT make falafel from scratch.
Why?
See exhibit A. I almost always get a boxed version on clearance.
Would it taste amazing to make from scratch? I’m sure.
But you can’t beat roughly $2.10. I bought 4 boxes last time I found them on clearance.

Just follow the directions on the box for the sandwich style. The chickpea flour rehydrates in 10 minutes. It takes longer to heat up the oil for frying.

Yes! You must fry them.

Our pitas were dressed with tzatziki sauce, lettuce, chopped tomato, and sliced cucumbers.
I added radishes to Ted’s for an extra kick.

I added a dollop of hummus to mine.
Obviously, I made two versions of tzatziki sauce. Ted’s could knock you out with the garlic. Mine has no garlic.

Otherwise, cleaned plates and second helpings were going on tonight.

I was given a directive to use up the last of the .

Well I did in a big way.

I made Thai Chicken Satay with Peanut sauce and peanut noodles with green beans (sorry no spinach in this household).
I used RecipeTin recipes for both dishes.

Nagi you are amazing!

These will be added to our regular rotation.

If you do decide to make these dishes you’ll need both yellow curry powder and red Thai curry paste. I keep these items on hand because we tend to eat international at home.

I am starting on food for tomorrow’s memorial service meal.
Southern Living Shout Hallelujah Potato Salad or a very close rendition of it
Blueberry lemon cake
Okra and tomatoes with hopefully if I get to it seasoned rice.

The okra and tomatoes plus rice have to be cooked tomorrow morning.
I
Am trying yo get the make ahead stuff out of the way.

Yes, I have more blueberries. 🫐

Eggs have to be washed too and cooked separately because I’m a freak about the eggs.
