Ingredients:

4 boneless, skinless chicken breasts
2 tablespoons taco seasoning
1 cup salsa
1 cup shredded cheese (cheddar, Mexican blend, etc.)
Cilantro to garnish (optional)
Directions:

Preheat your oven to 350°F (175°C).
Season both sides of the chicken breasts evenly with taco seasoning. Place the seasoned chicken breasts in a baking dish.

Honey Soy Chicken Recipe 🍗🥡
Ingredients:
🍗 1.25 - 1.5 kg / 2.5 - 3 lb skinless boneless chicken thighs or breast
🌱 1 tbsp vegetable oil, for cooking
Honey Soy Marinade Sauce:
🥢 1/2 cup soy sauce
🍯 2/3 cup honey (substitute maple syrup)
🍏 1/3 cup cider vinegar (or rice vinegar)
🍗 1/4 cup chicken broth
🍶 1 tbsp toasted sesame oil
🧄 1 1/2 tbsp garlic, finely minced
Serving Sauce:
💧 1/3 cup water
🌽 1 1/2 tsp cornflour/cornstarch
Garnishes (Optional):
🥬 Green onion, finely sliced
🌰 Sesame seeds
Instructions:
1. Marinade Sauce:
Place ingredients in a jug and mix well until honey is completely dissolved.
Reserve 1/4 cup for basting, refrigerate.
Reserve 2/3 cup for serving sauce, refrigerate.
2. Marinade Chicken:
Pour remaining marinade over chicken in a container. Coat chicken thoroughly.
Cover and refrigerate for 3 to 48 hours (minimum 3 hrs).
3. Serving Sauce (Makes 1 cup):
Place reserved sauce in a small saucepan.
Mix cornflour and water, then add into saucepan.
Simmer over medium heat for 5 minutes, stirring regularly, until it thickens to a syrupy consistency. Set aside and keep warm. If it gets too thick, just add a bit more water.
4. Cook:
Brush BBQ plate or grills with oil and heat to medium-high. Or heat oil in a large skillet over medium-high heat.
For thighs: Cook the first side for 2 minutes, then flip and dab with reserved basting sauce. Cook for 2 minutes, flip and baste. Then flip/baste every 1 minute for a total cook time of ~10 minutes or until a thermometer reads 75°C/165°F.
For breast: Cook the first side for 2 minutes, flip, and baste. Cook for 2 minutes, then flip and baste every 45 seconds or so for a total cook time of ~8 minutes (internal temp 66°C / 151°F).
5. Rest:
Transfer to a serving plate, cover loosely with foil, and rest for 5 minutes.
6. Serve:

Instructions
Pizza Bombs

Nonstick cooking spray, for greasing
1 ½ cups all purpose flour
2 tsp baking powder
½ tsp kosher salt
2 tsp cinnamon
¼ cup unsalted butter
¼ granulated sugar
1 large egg
½ tsp vanilla extract
½ cup no-sugar added applesauce
1 ½ cups peeled and finely diced Honeycrisp apples, about 2 medium apples
Glaze:
2 cups powdered sugar
⅓ cup plus 2 TBSP apple cider or apple juice
Instructions
Make the apple fritters:
Preheat the oven to 400 F (200 C); spray a baking sheet with cooking spray.
In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
Add the melted butter to a large bowl, then whisk in the sugar followed by the egg. Once combined, stir in the vanilla and applesauce. Add the flour mixture and stir until well combined, then fold in the chopped apples.
Scoop 1 TBSP of batter into mounds a few inches apart on the prepared baking sheet. Bake for 10 minutes, then remove the fritters from the oven. Turn the broiler on high.
Make the glaze:
In a small bowl, whisk together all the glaze ingredients. The glaze should be thin.
Brush some of the glaze over each fritter and let it drip down the sides. Return the fritters to the oven and broil for 2-4 minutes, until the glaze starts to caramelize the tops. Rotate the baking sheet every minute to ensure even caramelization. Be sure to carefully watch the fritter so they don’t blacken and burn.

50g (2oz) Parmesan cheese
1 cup white wine
1 cup chicken stock
1 garlic clove
4 tbsp olive oil
4 tbsp butter
1/2 lemon
Salt and pepper
Instructions:
Step 1
Crack the eggs into a large dish. Season with salt and pepper, lightly beat.
Step 2
Finely chop the parsley, keeping some for garnish. Add half to the egg mixture.
Step 3
Grate the Parmesan cheese finely, add to the egg mixture. Mix well and set aside.
Step 4
Remove chicken skin (if any) and butterfly cut the breasts. Flatten the thicker side using cling film and a meat mallet.
Step 5
Prepare white wine and chicken stock.
Step 6
Spread the plain flour on a plate.
Step 7
Peel and press garlic or chop finely.
Step 8
In a frying pan over moderate heat, add olive oil and half of the butter.
Step 9
Coat chicken in flour, shake off excess.

Turn the heat to medium-low and add the balsamic vinegar, Worcestershire sauce, and thyme. Continue to cook, stirring occasionally, for 20 to 25 minutes, or until the onions are very tender. Add 1 to 2 tablespoons of water to deglaze. Set aside and wipe out the skillet.
Prepare Chicken:
Season to taste with 1 teaspoon salt and black pepper and set aside.
In a wide, shallow bowl, whisk together the flour, pinch of salt, and paprika.
Set a large nonstick skillet over medium heat and melt 1 teaspoon butter.
Dredge two of the chicken cutlets in the seasoned flour, then shake off the excess and lay them side by side in the pan.
Cook the chicken for 3 minutes, or until lightly browned, then flip and cook for 3 more minutes. Set aside on a dish and repeat with the remaining butter and chicken. Set aside.
Assemble and Cook:
Combine the broth and 1 tablespoon of the flour mixture and mix, add it to the skillet and whisk on low heat, 1 minute, until it thickens. Toss the rest of the flour out.
Return the chicken to the skillet, top with onions and cheese and cover. Cook low 3 to 5 minutes, until the cheese is melted and bubbling.

How to Make Homemade Butter in a Mason Jar
Ingredients

Pour cream into the bowl of a stand mixer using the whisk attachment, or use a mixing bowl and hand mixer. Begin beating the cream on a low speed, and gradually increase the speed as the mixture thickens.
After several minutes, whipped cream will form. Continue mixing. The whipped cream will start to yellow. After several minutes more the fat solids will separate from the liquids and you'll see clumps of butter fat quickly form, leaving the sloshing liquid buttermilk in the bottom of the bowl.
Mason Jar Instructions
Pour heavy cream into the mason jar, filling it half-way full. Do not overfill past the half-way mark. Screw the lid on tightly so there are no leaks.
Shake mason jar for approximately 5-7 minutes. After a few minutes, whipped cream will form. Keep shaking until you hear that a lump has formed inside, and shake an additional 30-60 seconds after that. You should clearly see that the fat solids have separated from the liquids. The amount of time it takes will depend on how vigorously you are able to shake the jar.
Rinsing, Flavoring, and Storing
Strain the fat solids from the buttermilk using a fine mesh strainer or cheesecloth. You can reserve the buttermilk and save it for later use in recipes.
Pour cold water over the butter. Discard water and repeat rinsing 2 times more. Shape into a ball or any other shape (you can purchase butter molds for interesting designs).
At this point you have butter. You can add in things like salt, honey, and herbs to create flavored butters, or serve in its pure form as is

Creamy Chicken with Mushrooms
Ingredients:
- 300 g chicken breast
- 250 g mushrooms
- 30 g butter
- 150 g heavy cream (30-33% fat content)
- 50 g water
- 1 garlic clove
- Fresh parsley for garnish
- Vegetable oil
Instructions:
1. Slice the chicken breast into thin strips. Clean the mushrooms and slice them as well. Finely chop the garlic and parsley.
2. Heat a large skillet over medium heat and add vegetable oil. Once the oil is hot, add the chicken breast strips and cook until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.
3. In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and sauté until they are tender and lightly browned.
4. Add the garlic to the skillet and cook for another minute, stirring continuously to prevent burning.
5. Pour in the water and cook for a few minutes to deglaze the skillet and create a flavorful base for the sauce.
6. Reduce the heat to low and add the heavy cream to the skillet. Stir well to combine all the ingredients and let the sauce simmer for a few minutes until it thickens slightly.
7. Return the cooked chicken to the skillet and stir it into the sauce. Continue cooking for a few more minutes until the chicken is heated through.
8. Season with salt and pepper to taste. If desired, add additional herbs or spices according to your preference.
9. Remove the skillet from the heat and garnish the creamy chicken with chopped parsley.
10. Serve the creamy chicken with mushrooms hot over rice, pasta, or with your favorite side dishes.
