Italian Lemon Cream Cake

This delightful dessert offers a tender lemon-infused cake coupled with a creamy lemon filling, finished with a light dusting of powdered sugar for a refreshing flavor burst.

Ingredients :

3 large eggs.
1 cup sugar.
1/2 cup butter.
1 teaspoon vanilla extract.
1 teaspoon lemon zest.
2 cups all-purpose flour.
2 teaspoons baking powder.
1/2 teaspoon salt.
1/2 cup whole milk.
1/4 cup fresh lemon juice.
1 cup heavy cream.
8 oz mascarpone cheese.
1/2 cup powdered sugar.
2 tablespoons fresh lemon juice.
1 teaspoon lemon zest.
Powdered sugar, for dusting.
Lemon slices, for garnish (optional).
Fresh mint leaves, for garnish (optional).

Directions :

Heat oven to 350°F (175°C). Coat two 9-inch cake pans with grease and flour.
Combine sugar and softened butter in a bowl until fluffy. Add eggs one by one, mixing well each time. Stir in vanilla and lemon zest.
In another bowl, mix flour, baking powder, and salt.
Slowly integrate the flour mixture into the butter blend, alternating with milk and lemon juice until just mixed.
Share batter equally between pans and bake for 20-25 minutes. Let them cool in the pans for 10 minutes, then transfer to a rack to cool fully.
Whip heavy cream in a bowl until stiff peaks form.
In a separate bowl, mix mascarpone, powdered sugar, lemon juice, and zest until smooth. Fold in the whipped cream gently.
Place one cake layer on a serving plate. Spread lemon cream filling generously on top. Add the second cake layer and cover with more filling.
Finish with a sprinkle of powdered sugar. Garnish with lemon slices and mint if you wish. Cool in the fridge for at least an hour before serving."

Grilled Chicken Legs

Ingredients
1 ½ teaspoons light brown sugar packed
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon ground mustard
2 pounds chicken legs
½ cup bbq sauce
2 Tablespoons water

Instructions
In a small bowl, add 1 1/2 teaspoons light brown sugar, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper and ¼ teaspoon ground mustard and stir together well.
In a large bowl, add 2 pounds chicken legs then sprinkle on the spices and stir to coat all the chicken legs in the spices.
Cover with plastic wrap and place in the refrigerator for at least 2 hours to marinate (note: if you are in a time crunch, you can certainly cook them right away without marinating).
In a separate bowl, stir together 1/2 cup bbq sauce and 2 Tablespoons water until combined. Set aside.
Clean and oil the grates on your grill then preheat the grill to medium heat (about 350F degrees).
Place the chicken legs on to the grill, close the lid and allow them cook, turning every few minutes until an internal temperature reaches about 130-140°F. Time will vary depending on the size of the chicken legs, but this should take about 15-20 minutes. Note: keep an eye on the temperature of your grill. If it starts getting too hot, open the grill lid and turn down the heat.
Take the BBQ sauce and baste the legs on both sides and continue to cook until an internal temperature reaches at least 165°F about another 10 minutes or until your desired doneness (180-190°F results in fall-off-the-bone meat). I like to rotate the legs every minute or so and baste with the bbq sauce each time so the sauce will caramelize.
Once they reach an internal temperature of 165F degrees, they are done. I look to cook mine a little past 165F since I like them super tender and I like the skin to get darker and a bit crispier.

Bourbon Maple Bacon Cinnamon Rolls
Ingredients :
Candied Bacon:
1 lb bacon
½ cup brown sugar
4 tablespoon maple syrup
2 tablespoon bourbon
1 teaspoon cracked black pepper
Dough:
¼ cup all-purpose flour
¾ cup water
3 ½ cups all-purpose flour
⅓ cup granulated sugar
2 teaspoon instant yeast
¾ teaspoon fine sea salt
½ cup whole milk room temperature
1 egg room temperature
Tangzhong from above
4 tablespoon unsalted butter softened
Cinnamon Sugar Filling:
½ cup unsalted butter room temperature
⅔ cup light brown sugar
2 teaspoon cinnamon
1 cup crumbled candied bacon
Bourbon Maple Frosting:
4 tablespoon unsalted butter room temperature
2 oz cream cheese room temperature
¾ cup powdered sugar
½ -1 teaspoon bourbon
2 tablespoon maple syrup
½ cup candied bacon strips

Directions:
Make the Candied Bacon:
Preheat the oven to 375 F/ 190 C and line a baking sheet with parchment paper. Lay the uncooked bacon strips on the pan.
1 lb bacon
In a small bowl, combine the sugar, maple syrup, bourbon, and black pepper; spread it over the bacon slices. Bake for 30-40 minutes, or until the bacon is crispy. Remove the pan from the oven and use tongs to transfer the bacon to a wire cooling rack to cool completely. If your bacon is thinner, it may bake quicker. Keep an eye on it so it doesn’t burn!

Once cool, cut a few pieces into strips for the tops of the rolls (about ½ cup) then chop the rest of the bacon into crumbs (discarding any blackened ends).
Make the Cinnamon Roll Dough:
In a small saucepan, whisk together the water and all-purpose flour. Cook over medium heat, whisking constantly, for 4-5 minutes until the mixture is a paste-like slurry. Scrape it into a bowl and set it aside until ready to use.

In a stand mixing bowl, mix together the flour, sugar, yeast, and salt until combined. Add the egg, milk, and tangzhong to the bowl. Knead on low speed with the dough hook for 2 minutes until it forms a rough dough ball.

With the mixer running on low, add the softened butter ½ tablespoon at a time, letting it fully incorporate into the dough before adding more. Then continue kneading for another 8-10 minutes or until the dough looks smooth and elastic. The dough should be sticking to the bottom of the bowl. If it seems too wet and is sticking to the sides of the bowl, add flour one tablespoon at a time. If the dough seems dry, add half a tablespoon of milk at a time.
4 tablespoon unsalted butter
Remove the dough from the bowl and pull the sides down into the bottom center to create a smooth round ball. Place it seam-side down into a large lightly buttered bowl. Cover with plastic wrap and let it rise in a warm spot for about 1 hour, or until doubled in size.
Roll the dough out into a 15x18 rectangle, with the longest side closest to you.
Combine the butter, brown sugar, and cinnamon until smooth. Use an offset spatula to spread the cinnamon sugar filling across the dough, leaving a 1-inch border clean at the top.

Sprinkle the crumbled bacon over the top. Then use a pizza cutter to cut 12, 1 ½ inch strips. Roll each strip away from you, then carefully transfer them to a parchment-lined 9x13 baking pan.
1 cup crumbled candied bacon
Cover the pan with plastic wrap and set it aside to rise for another hour or until the rolls double in size. Meanwhile, preheat the oven to 325 F/162 C.
Bake the rolls for 24-30 minutes, or until the tops are golden brown. Let the pan cool on a wire cooling rack while you make the glaze.
In a medium bowl, combine the butter and cream cheese until smooth. Then mix in the powdered sugar. Once combined, whisk in the maple syrup and bourbon. Add more or less bourbon depending on how strong you want it! Spread over the warm cinnamon rolls, then sprinkle the reserved bacon slices on top. Enjoy! "

Grama's Cornflake Peanut Butter Cookies
These no-bake cookies are a sweet and crunchy treat that's quick and easy to make.
Ingredients:
½ cup white sugar
½ cup light corn syrup
2 tablespoons butter
½ cup peanut butter
3 cups cornflakes cereal
Directions:
Gather all ingredients.
In a saucepan over medium heat, bring the sugar and corn syrup to a boil.
Stir in the butter and peanut butter until thoroughly combined, then remove from the heat.
Place the cornflakes into a large bowl. Pour the peanut butter mixture over the top and mix until the cornflakes are well coated.
Drop 1-tablespoon scoops of the mixture onto a waxed-paper lined baking sheet. Flatten slightly if desired.
Allow the cookies to cool for 30 minutes before serving.

ORANGE CHICKEN RECIPE
Ingredients:
For the batter
3/4 cup flour
2 tbsp corn starch
1/3 cup cold water (may need more to make batter thinner) (add additional water slowly)
1 egg
1 tsp garlic powder
Salt and pepper
6-8 boneless chicken thighs cut into bite sized pieces
Oil for frying
Orange sauce
Juice from 2 oranges
Orange zest
5 tbsp sugar
5 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp cornstarch mix with 4 tbsp cold water
1 tsp ginger
1 clove minced garlic
Instructions:
Make batter by mixing flour, cornstarch, salt, pepper, garlic powder and water. If batter is too thick add a little water more a little at a time.
Add in chicken and mix until coated evenly. Fry in 350 degree oil until a meat thermometer shows chicken is done.
Mix all ingredients together for sauce.over medium heat add sauce to a pan and add chicken in allowing sauce to thicken and enjoy.

S’mores Crack
Ingredients :
10 full-size graham crackers
1 cup salted butter
1 cup light brown sugar, packed
3 chocolate bars, broken into pieces
1 cup mini marshmallows
Instructions :
Preheat oven to 350 degrees Fahrenheit.
In a 9x13 pan lined with parchment, place the graham crackers in a single layer along the bottom, ensuring the pan is fully lined by breaking crackers if necessary.
Add the butter and brown sugar in a medium saucepan over medium-high heat. Stir constantly until the butter has melted. Let the mixture boil for 3-4 minutes until it starts to thicken.
Pour caramel mixture evenly over the graham crackers and bake for 6-8 minutes.
Remove the pan from the oven, sprinkle with the broken chocolate bar pieces, and then the mini marshmallows.
Turn the oven to broil then place the pan back into the oven until the marshmallows start to get golden, about 1-2 minutes. Watch it CLOSELY, this happens very quickly because every oven is different.
Allow the bars to cool and slightly harden then cut into pieces and serve.

Stuffed Mushroom Dip
Ingredients:
8 oz cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/2 cup chopped baby bella mushrooms
2 cloves garlic, minced
1/4 cup chopped fresh parsley
Salt and pepper to taste
1/4 cup breadcrumbs (optional, for topping)
Chopped parsley for garnish

Directions:
Preheat the oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
In a mixing bowl, combine softened cream cheese, sour cream, mayonnaise, Parmesan cheese, and mozzarella cheese. Mix until smooth and well combined.
Stir in chopped mushrooms, minced garlic, chopped parsley, salt, and pepper.
Transfer the mixture to the prepared baking dish, spreading it evenly.
If desired, sprinkle breadcrumbs evenly over the top of the dip.
Bake in the preheated oven for 25-30 minutes, or until the dip is bubbly and the top is lightly golden.

Ingredients
1 pound ground beef
1 10.75 ounce cream of mushroom soup
1/2 cup milk
1/3 cup sour cream
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups frozen corn
1 1/2 cups cheddar cheese shredded, divided
1/2 cup bacon cooked and chopped
28 ounces tater tots frozen
Instructions
Preheat the oven to 375 degrees. Spray a 9x13 pan with cooking spray.
In a skillet, cook ground beef breaking into small pieces; until no longer pink. Drain grease.
In a large bowl, whisk cream of mushroom soup, milk, and sour cream until smooth.
Add onion powder, salt, and black pepper. Mix until combined.
With a wooden spoon stir in ground beef, corn, ½ cup of cheese, and bacon until well mixed.
Pour into the prepared pan. Layer ½ cup cheese and tater tots on top.
Bake for 40 minutes; until bubbly and tots are browned. Then top with remaining ½ cup cheese and bake until melted; about 5 minutes.

Ingredients
1 ⅔ cups (217 g) all-purpose flour
1 teaspoon cornstarch
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup (210 g) light brown sugar, packed
5 tablespoons unsalted butter, softened
¼ cup (56 g) mashed ripe banana
1 teaspoon vanilla extract
1 large egg, room temperature
Instructions
Preheat oven to 375ºF. Line two baking sheets with parchment paper.
Combine the flour, cornstarch, baking powder, baking soda, and salt in a small bowl.
In a large bowl beat butter and brown sugar until light and fluffy. Beat in the mashed banana, vanilla extract, and egg until well blended.
Using a silicone spatula, stir the flour mixture into the banana mixture until well combined.
Using a 1.5-tablespoon cookie scoop, drop cookies onto the prepared baking sheet about 2 inches apart.
Bake for 10 minutes or until cookies are lightly browned. Cool the cookies on the pan for 5 minutes before transferring them to a wire rack to cool completely.

Snickers Salad
Ingredients
1 package vanilla instant pudding mix 3.4oz/102g package
1 cup 2% or whole milk
2 cups Cool Whip thawed
4 small Granny Smith apples chopped
6 Snickers bars cut into bite-sized pieces
½ cup caramel sauce
Instructions
In a large bowl, stir together the vanilla pudding mix and milk. Fold in the Cool Whip.
Add the Granny Smith apples and Snickers bars and gently mix them in the pudding mix.
Scoop the dipping into a serving bowl and top with caramel sauce. Serve chilled.

Spaghetti Grilled Cheese Sandwich
Ingredients:
8 slices bread
4 tablespoons butter, softened
2 cups cooked spaghetti
1 cup marinara sauce
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil leaves, for garnish (optional)

Directions:
Heat a skillet or griddle over medium heat.
Spread butter on one side of each slice of bread.
On the unbuttered side of 4 bread slices, evenly distribute the cooked spaghetti.
Spoon marinara sauce over the spaghetti, then sprinkle with shredded mozzarella and grated Parmesan cheese.
Top each sandwich with the remaining 4 slices of bread, buttered side facing out.
Place the sandwiches in the skillet or griddle and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Remove from the skillet and let cool slightly before slicing in half.
Garnish with fresh basil leaves, if desired, and serve warm.

Prep Time: 10 minutes | Cooking Time: 8 minutes | Total Time: 18 minutes
