This was a sea themed platter with our famous brown butter chocolate chip cookies as sand dollars, sugar cookies as starfish, and white chocolate madeleines as shellfish. My first job was at Hamilton-Turner Inn as a tea server, when I was a freshmen in high school at SVA in downtown Savannah. We would bake traditional madeleines, scones, shortbread, and tea sandwiches for the guests. Funny how things circle back. Have you ever had a traditional French madeleine?
