Cooking is one of humanity's oldest ways of caring for another person.
Chapter 1
The Dawn of Flavor
Spices in Mesopotamia — c. 5000 BC
Long before supermarkets, shipping containers, written cookbooks, or even the first great empires, humanity had already begun discovering something remarkable about food.
Plants could transform it.
A crushed seed could change the character of a bowl of grain.
A handful of aromatic leaves could turn boiling meat and water into something fragrant.
A bulb pulled from the earth could give an otherwise ordinary meal a powerful new personality.
Thousands of years ago, human beings were already learning one of the fundamental truths of cooking:
Flavor matters.
The story of spices begins among some of the earliest agricultural civilizations in the world.
Between the Tigris and Euphrates Rivers stretched a fertile region that the Greeks would much later call Mesopotamia — “the land between the rivers.”
Here people built some of humanity's first cities.
They developed irrigation.
They cultivated grain.
They domesticated animals.
They created systems of government, religion, commerce, mathematics, and eventually writing.
But civilization was also being created somewhere less celebrated:
in the kitchen.
The people of ancient Mesopotamia learned to combine grains, vegetables, meats, herbs, seeds, onions, garlic, and aromatic plants in ways that transformed basic nourishment into cuisine.
Cooking was becoming more than survival.
It was becoming culture.
And from those ancient cooking fires began a journey that would eventually span the entire globe.
