I have been experimenting with sourdough baking and have introduced some very cool Montana Clay vessels in which to bake it! I have 3 sizes available. The small makes about a600gram/1.25 lb) loaf, medium 900 (2 lb) loaf and large 1200g/2.5 lb) loaf. Because these baking pieces are fired to a semi-poros state they can be soaked in water before baking and produce a crust which has that great sourdough crispy chewiness but not so thick, tough or too dark.
