I have a lot of followers that love mixing their Mullen's French dressing with ranch dressing. They only sale these for a small amount of time and only at their facility in Palestine, Illinois. They don't use preservatives so it must stay refrigerated.

It's almost time for the Pioneer City Pro Rodeo which means we have a fresh batch of Ranch and Franch Dip for your Labor Day picnics! Which do you prefer?

This Labor Day weekend the Indiana Military Museum Inc in Vincennes, Indiana is having their World War II Event on 9/5/26 - 9/6/26. The museum will be open, there will be battle field demonstrations, battle reenactments, camps and displays, USO music, and of course, food provided by Kolbs Culinary Creations food truck and other local food vendors! I've went to this many times and it's a great experience. 10 a.m. to 5 p.m. both days.

I had been planning my Snappin’ Up Some ’Que Road Trip for weeks, and in Van Buren, Arkansas, I had Rub ‘Em Tender BBQ picked out as one of my stops.
But when I pulled in and saw an empty parking lot and the outside of the building… I’m not gonna lie. 🤣 I literally grabbed my phone and started searching for another BBQ place.
Then I reminded myself of something I’ve learned doing these reviews: some of the BEST food comes from little hole-in-the-wall restaurants.
So I decided to give it a whirl… and man, am I glad I did!
The BBQ was fantastic, but those SIDES might have been even better! 🔥 This ended up being one of those places that reminds me exactly why I love doing these food adventures.
And FYI—the inside was actually VERY nice!
I just hope the folks at Rub ’Em Tender don’t get upset with me calling it a “hole in the wall.” 🤣 If you’ve watched my past videos, you already know that coming from me, that’s a compliment!
Sometimes you just can’t judge a BBQ joint by the parking lot! 🤣

I want to give a HUGE shoutout to my followers!

For about a year now, I’ve been saying that I have some of the best followers out there, and you all still don’t disappoint.

I’ll admit, my spirits have been a little low over the last 45 days, knowing I’ve still got about 45 more to go before things hopefully gets back to normal. But I’ve been blessed with some great followers who continue to comment, share my posts, and keep me motivated to push through it and keep putting out reviews.

Today was a BIG pick-me-up.

I ran to the store after work to grab a few things to make tacos. Before I even made it through the door, the store manager was leaving, stopped me, asked if I was Meals In A Snap, and told me that she and her husband love watching my videos.

Then I went inside, and I bet another 10–15 people stopped me while I was shopping. Some said, “Hey, we love your stuff!” Others wanted to know, “What are you cooking tonight?” 🤣

You all have no idea how much that lifted me up today.

So, a HUGE thank you to everyone who stopped and said something—and to all of you who continue watching, commenting, sharing, and supporting Meals In A Snap. Those little interactions mean more to me than you probably realize.

And by the way... here are those tacos I told everybody I was making. 🌮🤣

This was my first time eating Ribs from an alley. My second stop on my Snappin' Up Some 'Que Roadtrip was at Charlie Vergos Rendezvous in Memphis, Tennessee. This well known bbq joint sits right in an alley. I had their ribs and brisket combo platter which my waiter comically told was their number one thing to order. Have you eaten ribs in an alley? 🤣

I have never been to The Cafe Moonlight in Vincennes, Indiana for lunch. Working a Split shift tonight and in between chores this morning, I grabbed a bite to eat. I got the tenderloin and ungyun rings. Pretty darn tasty! I doubled that puppy up and it was perfect for that toasted Kaiser bun. Oh, and I'm not sure when they started getting Diet Dew but that made my day. 🤣

On my second day of the Snappin' Up Some 'Que Roadtrip, I stayed at the Holiday Inn Express in Poteau, Oklahoma. The staff was great and the room was clean but the rooms were outdated and falling apart. This was way below the standards I expect when staying at a Holiday Inn Express.
