✨ Craft vinegar is stepping into a broader culinary conversation — and we’re honored to see Hawaiian Vinegar mentioned alongside a cohort of producers shaping what this category is becoming.

Mahalo to for including our Banana Vinegar in your recent roundup and recognizing small-batch craft from places like Wahiawā, Hawaii.

This featured batch began with Nam Wah bananas from the North Shore.

We purchased the fruit and brought it into our Vinegary.
Wine first. Then vinegar.
Slow, natural fermentation — start to finish.

From fresh island-grown fruit to shelf-stable craft vinegar, built for serious kitchens.

North Shore grown bananas.
Fermented and bottled in Wahiawā.
100% Hawaiʻi.

Grateful to be part of this rising movement — and grateful to our community at home who continues to cook with us and believe in what we’re building.

Sweet. Tart. Local.

The New York Times calls it: The Ingredient of 2026 — Vinegar ✨

According to , vinegar is officially moving far beyond salad dressings and shrubs. Chefs are spritzing thyme vinegar on warm cookies, pairing red wine vinegar with kombu jelly, and rethinking how acidity shows up across the plate. Bartenders are using it to build non-alcoholic drinks with real character. Home cooks are reaching for it to wake up sauces, vegetables, and everything in between.

Bold or mellow. Aged or infused.
Flavor booster, health tonic, creative secret weapon.

The brands shown here reflect the growing diversity of the category and are featured in articles on Vinegarprofessor.com, where we explore how different styles of vinegar are being used today.
