Louise Hinsley is retiring from Extension after 41 years! She was a 4-H Agent for 33 years and for the past 8 years she has been the FCS Agent here in Beaufort County. For those of you who know and love her, please join us as we celebrate her retirement!

Had a fun culinary class last night making sheet pan meals. Teams of two filled their little 1/8th size sheet pan with veggies and chicken tenders to roast in toaster ovens. Demonstrations included Chicken pot pie and Chicken Quesadillas on 1/2 size sheet pans. We seasoned with choices of salt-free herb and spice blends. Everything baked at 400 degrees F. for 30 minutes. Easy to prepare, nutritious and delicious! ECU intern Riley Cutler was instrumental in the success of this educational class with Louise Hinsley, Extension Agent, FCS.
